Making Nandos style chicken strips and spicy rice - home cooked budget version of a take out meal!

  • Hi all. Pranesh wanted to get strips and spicy rice the other day and got to thinking about the price of the much loved take out meal. At R64 per portion if we buy 3 servings it would cost almost R200. So we decided to make our own version. With the vegetables and spices we bought specific for the recipe we came out to about R120 for 3 servings but we were more generous with the chicken and get to keep all the left over spices for another day.
    Ingredients
    Chicken strips
    500g chicken breasts, cut in strips (R40)
    1/4 cup melted margarine or butter (R10)
    1 tsp crushed ginger and garlic (pantry)
    1/2 tsp garlic salt (pantry)
    1 tsp chicken spice (pantry)
    1 tsp smoked paparika (pantry)
    1 tsp cayenne pepper (R17)
    Dried mixed herbs (pantry)
    nandos wild herb sauce (R35 - we used half)
    salt and pepper to season (pantry)
    Spicy Rice
    1 cup rice, rinsed - feeds 3-4 people (pantry)
    1 heaped tbs spice for rice (R17)
    1/2 tsp fine salt (pantry)
    1/2 green pepper, finely chopped (R10)
    1/2 red onion chopped fine (R8)
    1/2 cup frozen mixed veg (pantry)
    1 tsp paprika and 1/2 tsp cayenne pepper
    1/4 cup melted margarine/butter to stir fry
    Serve strips and spicy rice as main meal or spicy rice as a side to other meals.

      Pranesh went to a camera store in Midrand and one of the neighboring stores was a pop up selling imported catering equipment. They were in the Grey Owl center. Not sure if there are still there…

      We will give it a go. I think that the full Nandos chicken is marinated overnight and then flame grilled so we will maybe do it on a braai.

    Question: even though the rice is hot, isn't it better to cook out the dry paprika and cayenne pepper spice beforehand? Otherwise you don't get the full flavour?

      You could do so with some melted butter. But it may make the rice a little greasy.

      This is a le creuset plancha. I’m not sure if they still make the shape we have but they do have a square plancha on their website at the moment.

    Hello Sweet Mama & Pranesh 🙏A delicious and easy to make dish, great with chicken and perfect for a family meal.Peri Peri sauce is a truly global recipe. Portuguese explorers brought capsicum frutescens from Brazil back to Europe.
    Merchants and colonists then took the malagueta pepper to East Africa, to modern Mozambique. The plants naturalized there and evolved into the African Birds Eye or Peri Peri chillies, on which this sauce is based.Peri peri (piri piri) sauce brings vibrant, piquant taste of Africa to your cooking and this also can be homemade.Ingredients
    10 peri peri (African bird's eye) chillis or other hot chillis (dried )
    1 tbsp olive oil
    3 cloves garlic
    1 onion
    2 tsp paprika
    1/2 tsp allspice
    1 tsp oregano
    2 roasted red peppers (we use bottled ones for convenience)
    2 lemons (juice and zest)
    1 tbs sugar
    100 ml cider vinegar
    2 bay leaves
    pinch salt
    80 ml olive oil
    Instructions
    Soak the chillis in half a cup of boiling water until the water has cooled. You can leave them soaking overnight if you wish.
    Chop the onion and garlic into large pieces.
    Heat the one tablespoon of olive oil in a large frying pan or shallow casserole dish. Gently fry the onion and garlic until it is translucent. Then add the herbs and spices (except for the bay leaves). Fry for a couple of minutes longer.
    Transfer the fried onions to a blender. Add the soaked peri peri chillis (drained - discard the soaking water), the roasted red peppers, lemons juice and zest, sugar, and apple cider vinegar. Blend until nearly smooth, but still with a little texture.
    Return the mixture to the frying pan or casserole. Add the bay leaves, and heat on a low-medium heat until just simmering. Turn down to a very gently simmer.
    Cook the mixture for about 20 minutes, until it thickens and has reduced by a half to a third. When it is ready, a wooden spoon or spatula should leave a trace on the bottom of the pan.
    Transfer the mixture back to the food processor. Then blitz again, slowly adding the 80ml of olive oil as you do so. It is important to add the oil slowly so the mixture emulsifies so you get a lovely smooth sauce.
    Blitz to a smooth paste. The peri peri sauce will take on a vibrant orange-yellow colour. It’s now ready to use. Pour the mixture into a jam jar, and keep in the fridge, where it will last for a week. And now hope Nando`s won`t sue us for this!😀Enjoy your peri peri and next on your list KFC😄.🙏

      I think you can reverse the chilles ratio towards the red peppers for Pranesh heat tolerance.

      @@GaithreeDeviLuckan I am in Croatia. I have tried about 10 different sauces. I have concluded that there is nothing like nandos. Fortunately I brought my own spices and I can make curry.
