I've always wanted to know how this was made. The only thing I changed my was 1 teaspoon of white pepper and 1 teaspoon of ginger to the dry mix. Absolutely gorgeous.👍👍👍👍👍

Great one for me to try, cant eat the wings at the minute because i have had braces put on. How long did you fry the chicken? seen you cut them small, so im guessing it isnt that long?
Hi Khoan I made a dish a fee weeks ago honey chilli chicken it is one we would order sometimes from our local take away, I made with some of you chicken batter dishes and sauce dishes and added honey could you put one up so I could make like yours

whenever i deep fry with flour coating like this the flour comes out, mixed to the oil and burnt black within seconds. the oil becomes dark and canot be used. anyway i can prevent that and keep the oil for reuse?
that sounds strange. if the flour come away from the chicken, it means your oil is not hot enough. if it burns and turn black it means your oil is too hot. what type of oil do you use. try sunflower/rapeseed oil. temprature around 180C and ensure you use a big pot with enough oil in it. don't over fill though.
Khoan Vong thank Khoan. I notice if the flour is wet it wont come off the meat. if i just coat the meat and there are dry flour outside the flour will dispurse into the oil. ill try to make the oil real hot next time

It was simply amazing :) Salt n Pepper chicken on a bed of rice, drizzled with sweet chilli n garlic sauce and a side of sambal. Brian Gohjira cook on the highest heat your stove top will go to. it won't be exactly the same as restaurant quality, but it's impossible to get exactly the same flavour at home because they use industrial grade equipment.
have tried for ages to replicate this at home tried your version today and it tastes exactly like my local takeaway....thank you for sharing 😀

Made this and it was delicious. Is there an alternative you can use to potato starch as I sometimes struggle to get it.

they are quite similar, potato starch has a clear appearance when cooked I suppose. You can use either.
What I must say though is the chicken breast marinade. I use that all the time now with stir fry’s. Rice wine sesame oil and salt perfect 👍

khoan I didn;t have potato starch so just used cornflour...... was delish but is it worth trying to get some potato starch?

yes, salt and pepper tofu is a good seller in the shop. you need to deep fry the tofu first. I have a video on frying tofu; have a look at it.

Gold Butter drain the oil through a kitchen towel over a sifter to an other pot to get clean oil again.

You made it look so quick! I usually take 3 times longer on the wok because I don't have your cool jet engine burner.
The jet burner is very expensive to run:)
Dont need to put wine into the wok.will make the chicken soft.not very crispy
that wok is so hot that the wine doesn't actually sit long enough to soak in to the batter it just evaporates off and leaves a nice element of flavour
