How to make Salt and pepper chicken wings (pro.)

  • I am going to show you guys how to make the best chicken wings with salt and pepper...without the pepper:)
    You know I am a bit confused with this title myself, I mean it's called as salt and pepper and yet pepper is not the main ingredients. Why? Well I guess it's one of the many lost in translation Chinese dishes.
    In Chinese language; chilli (辣椒 la jiao) sounds phonically like pepper (胡椒 hu jiao)。We called this dish "chilli salt" (jiao yan 椒盐). "jiao 椒" as in chilli not pepper "胡椒 hu jiao". This dish should be call salt and chilli to be accurate.
    Obviously you can call a dish whatever name you like, the most important thing is. It taste nice! The recipe I am about to impart to you guys is not only nice. It's awesome !!
    The most important part of this dish is the salt and pepper mix. Get that right, you are almost there. Salt is the main taste for this recipe; therefore it needs to be enhanced to bring out its hidden flavor.. it needs to fried.
    Below is my recipe with instructions.. enjoy:)
    Salt and pepper mix;
    3 tablespoon salt
    1 tablespoon msg
    1 tablespoon sugar
    1 teaspoon 5 spice powder
    For you guys who still can't get your head round salt and pepper without the pepper you can sling half a teaspoon of pepper powder into the mix.
    Make sure the wok is dry (important) fried the salt at low heat for about 10 minutes until it turn a brownish color. Set it aside to cool.
    Note: Do not touch the salt with you hand, even by accident. you will get burnt! It's hot.
    When the salt has cooled down put the rest of the condiments together and mix it thoroughly. See picture below.

    my local Chinese adds the salt n pepper mix at the very end AFTER the dash of cooking wine as it helps the salt n pepper mix and garlic stick to the wings more......hope it helps !

      Nothing really. But chicken stock is next best.
      That too has msg in its ingredients.

      can do if you want it crispy, most restaurant just fried the pork loin with the batter coating.

      Chinese cooking wine. Spell something like "shao xing" wine

      just leave the wine out. It has no effect on the taste.

    I'm going to try making the wings next, just wondering why do you use potato starch for the chicken but flour for the chicken wings? Can I use potato starch for both?

    wow Khoan, very nice and just like I had back in the uk. Cantonese style and these types of appetisers aren't on any New Zealand Chinese menus. Something i miss now I'm over here. It's nice to see you posting things like this and ribs so I can cook all myself.
    do you think you could do a Chinese dry style BBQ ribs, the ones that are red and just served with a wedge of lemon they have a slight sweetish bbq flavour to them.
    also I notice your salt spice mix has changed a bit, is that because its better or just that this particular chicken dish suits I better. the spice chilli ribs recipe is awesome!

    Would potato starch give a better crispy texture other than flower I. Heard about adding custard powder too? Great video chef.. Glad to see you post more frequent videos now 😃

      No. Potato starch makes it too hard. You want crispiness and moist inside. Thus deep frying for too long not ideal. Custard powder has sugar, sugar not suitable for deep frying.

      belinda brice I mostly use rice wine and shao xing wine. The pepper is just normal black pepper powder.
      I do have sweet and sour sauce on my channel if that is what you are looking for Belinda.

      Yes, of course. That makes it even better. Don't forget to leave the salt to cool down before mixing other stuff in.
      And DON'T touch the salt after frying. It's very HOT!

    Restaurant on Lamma Island HK does what they call salt and pepper squid where the squid has the texture of quavers (UK snack). The squid explodes/ disintegrates as you eat it. How do they do it?

      it adds to the flavour, but you you do not consume wine; leave it out.

      i also believe it helps the garlic (if very finely chopped) and the salt and pepper stick to the chicken, i suppose one could use a dash of water/white vinegar mix ?

      Just leave it out. The wine does not make much difference to the taste. It just give it a tang!

      You mean like minced prawn with chicken wing...similar to.crab claws

      ***** No, not like crab claws, I think they use some fermented shrimp/prawn sauce to marinate the chicken.
      But I have no idea how they make the sauce.
      Ate it in singapore

    just a question but isn't MSG a band item, i am sure all chinese take away stores here in Australia do not use this anymore as it was shown to i think was shown to cause cancer no?
