Most people say VeeVeeZee as that combines their original Korean name BiBiJi and the English spelling. They created their own group name by combining the last two letters of their names. Both Eunha and SinB are called EunBi in real life and Umji used the letters from her stage name. Their company thought that this was too complicated to explain for their debut so changed it to the English name VIVIZ instead. They released an announcement saying that VIVIZ stood for Vivid Day(z) for global audiences to understand it better. It was really funny that the members didn’t know what this name meant at their first interview so had to look at a crib sheet they were given. So the Korean name is often pronounced BeeBeeJee by non Korean speakers and used as their name when spoken whilst still others pronounce VIVIZ as Viv Izz to reflect the Vivid Days(z) explanation. So basically say it however you want. I use all three versions myself from time to time. Funny you should mention Joy, as Yerin from GFriend is her best friend from their schooldays and they form an inseparable trio with Hayoung from APink. There is a sweet video of the three of them sat together on their graduation day and they even were given a special stage at an award show, so well known is their friendship. SinB and Yerin were very close in GFriend and had a cute ship called SinRin which has dozens of videos revealing their specially close bond. So the Joy connection is even more relevant to VIVIZ.
Viviz is fire. Viviz members have their own vocal color with personal character. SinB is the cool cat within the group. Eunha is the eternal doll with boundless cuteness. Umji is just, as you said, lethal when ready.

About the Pronunciation of "Viviz" the Korean name is pronounced "Bee-Bee-Jee" , as an English speaking fan I use "Vee-Viz" because the other meaning of their name is "Vivid DayZ" . The Korean name is from their names combined Eunha and SinB's real name is both "Eunbi" so BiBi then Umji = Bibiji
