Nice! One of my projects last year dealt with remote severs, iRedMail, Gophish, and a fictitious company to practice phishing email analysis. I'm now working on building out a mini SOC with Defender, Sentinel, PEH Lab, the remote servers from my old lab, and whatever else I come up with while building this project. . I use Trello and sometimes Jira to track my project.
I just recently got a SIEM project up and deployed by Wazuh consisting of my mac, and a cloud based ubuntu vm I made on linode. By the way i love linode just so easy to work with. Now i am trying to figure out how to install agent on my son's mother chromebook but running into some issues with getting it to run. I have one question, how can i link this project to my github for people to see? im still learning github
Your thoughts really opened up my mind. I was struggling to look for ideas and was pushing myself here and there to get something unique. Now I know what to do. That music on piano thought eventually caught my attention. So, yes let's pick those great soothing projects from the wild and do our own kinda remixing and stuff and create a great EDM out of it.

Definitely agree that it’s very important to have a roadmap in what you want to do for projects and that being enthusiastic about doing the projects to level up is HUGE! Really great explanation and very beneficial information and motivation to pursue projects!
