That sound Sarah you are talking about is the onboard tremelo effect on the Fender Rhodes 'Suitcase' model electric piano, which would pan continuously in sequence between the left and right stereo speakers of the cabinet the keyboard section sits upon. Each speaker was miked up for recording to capture the sound. Very striking, and fantastic through headphones, it's a beautiful effect which you can also hear on Stevie Wonder's incredible song 'Living For The City', as well as 'You Are The Sunshine Of My Life'.
I sure do miss the electric piano. It kind of disappeared at the start of the 80's, but it has a character all its own. His song "Darling Lorraine" is one you would love, I think. It's the best song about marriage I've ever heard. A wonderful, nuanced story told by a master storyteller. :)
