    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.     I just made 3/4 of a gallon of this sauce and I have just figured out it ain't enough. Wonderful on fried chicken, fried fish, egg rolls, spring rolls, eggs, bacon, toast and ice cream. try it before you knock it.

    I love making my own sauces & I’ve made this several times and it turned out great . I’ve made large quantities and given away to family & friends as gifts and I get more requests every time. Finally, decided to share the video with them so that they can try it out as well 😂.
    I used corn starch instead as it’s readily available in my grocery store. Thank you once again & I never buy it anymore and besides, the sugar content in this is way less than that readily available in the grocery store.

    I added fish sauce on purpose and ginger by accident, both in small amounts, and it turned out amazing! Both are flavors that muck about in the background and it really worked well with all the sharpness from the other ingredients.

    This comes SO ver perfect on time you won't believe it! I just came home from shopping with some spring rolls in my bag. Wanted to bought a sweet chili sauce but didn't cause they had non appetizing one in the grocery's. Now that I know how to make it, I'm going to prepare one by myself tomorrow.

    I was making your fried pork spring rolls and didn't have sauce! I also didn't have any fresh peppers at all, so I subbed about 2 tablespoons(I didn't measure) dried chili flakes. I also cooked it for a little longer. It's super spicy, but it worked in a pinch!

    this looks fantastic. I live in vietnam and this is the sauce we have with deep fried squid. I've got a squid in the fridge i'm going to make calamari for lunch and make some of this first to go with it

    I LOVE your site Ms. Pailin! I made some Thai "inspired" chili sauce from an improvised recipe back in the summer using coconut sugar, but only because I have to avoid white sugar. It lasts forever, and I used it for my stir fries and fried fish dishes. I'm going to try your recipe next. Thank you for the idea of giving it as a Christmas gift. People love these homemade gifts.     MY GOD THAT IS NOT JUST A SAUCE. THAT IS THE WORK OF ART.
    I have only dreamed about recreating aroy-d sweet chilli. It is the only brand that makes it p-e-r-f-e-ctly, others can't compare in the slightest. Still, your home version - gosh, it turned out delicious!!!! Like aroy-d but without that starch layer.

    I could never find spur chilis in the US. Finally found red Anaheim peppers...they’re very mild but they do lend a nice pepper favor. I also added a couple of spoonfuls of fish sauce....DELICIOUS!

    Wow. We like Thai chili sauce here at our house but have only had store bought. I was at the Asian Market the other day and they had a fresh box of red Thai chilis and this recipe came to mind so I bought a few. We followed the directions but we used about 1 1/2 chili's (these things are supposed to be "HOT"! Any way, it didn't take long at all to make but this came out perfect! So wonderful. Not too hot but it slowly warms the face just right and the flavor is out of this world as compared to the store bought.

    I used jalapenos and ended up diluting the sauce. Most of the jalapenos I grew this year were pretty mild, but I lucked out and made the chili sauce way too spicy. All I did to dilute it was simmer your ratios of water, sugar, and vinegar together for the five minutes, then I added a slurry. After that, I simply mixed it into my original batch. Your recipe is so hearty, my end result was still more thick and flavorful than store bought.

    I got to taste sweet chilli sauce when I spent 1½ years in Brisbane for my twinning degree program. Of course it was a commercially made one, but the taste was fantastic! It's a really great dipping sauce with potato wedges, tater tots and even Turkish kebabs!

    Never goes bad indeed! I've got a jar of spicy chili that I made over a year ago and I use it bit by bit. Smell it ever time before using. Over a year later and it's still good :D

    Hi Pailin, I am from the island of Trinidad and Tobago 🇹🇹, we make hot sauce many different ways. I tried your sweet chilli sauce and it was great . as beautiful as you. I now live in Toronto Canada 🍁 I have to say the raw material here is good but not the best . I would love to have your cook book 📕. Also you are the first cook that I am reaching out to, not only because you are beautiful but w like some of the dishes that you have made.

      Hi are the Anaheim chilie mild like very mild maybe if i remove the seeds and ribs ? u c i can't handle the heat.

      @@tracey1979 anaheim are fairly mild compared to poblano or jalepeno. Store bought fresh are fairly mild. Can buy canned also, good to stuff w/ cheese for chilli relleno

    Truly awesome .... as a side note .... I went to a local Thai Restaurant (Australia) and they served this sauce home made and it was clear (translucent). It had the flavour, but is it an authentic sauce that you may have come across ...
