    The bread is meant to be harder than American bread. It's super nutritious compared to what you get in the US. You'd usually slather it with butter and it works best next to a hot bowl of salmon soup that is glistening with golden globules of butter fat, with sweet, vibrantly orange carrots, some distinctively flavourful potatoes and soft, delicious chunks of salmon in a rich seafood broth, for instance. You have to understand that the bread comes from a rural, rugged culinary tradition that does best with local ingredients. Finns aren't big consumers of shrimp, so we don't always know what to do with them. We have crayfish, but they're a niche delicacy for the few in a historically agrarian society. If you can appreciate humble ingredients, there are no potatoes out there like the new season almond potatoes from Lapland. Sadly, these things translate poorly into airplane food.
    The bread is something that Finns miss when abroad and that they're pretty proud of, but Mike's reaction is completely understandable when put into context. I bet he'd enjoy the softer, sweetened variety they make in the archipelago, though! Why would you ever serve jasmin rice with salmon on an airplane?

    Glad you're liking Finnair! Also a tip for you if you ever fly with Finnair again or are just visiting Finland, you should put butter on the rye bread, it completely changes the texture and it becomes really delicious

    Scandinavian rye bread is dry and hard like that, but you're supposed to eat it with toppings (or even butter would do) just like when you eat crackers with your charcuterie plate.

      The first flight left from the US so the food is made by an American catering company while the second leg was a Finnish company. One of the reasons people hate American based carriers.

    the great thing about watching shows weekly is that you have the whole week to think about what you just saw and what is going to happen next episode. like you go into the next episode with way more on your mind about things than just mindlessly watching an entire season and Then looking back on what you just saw. personally i prefer the buildup of excitement and anticipation for an episode that you can only get from waiting a week in between. it feels like a show is more impactful this way when looking back on it months after watching.

    If you ever get bad food on a flight its more likely the airports fault and not the airline... especially when the flight originates out of the States. Food is always ALWAYS better when you're flying from an airline's home base. American airport catering suuuuuuuucks

      Even moreso when you have an American food service kitchen trying to execute a foreign airline's menu. That was actually why Lufthansa bought an American flight caterer.
      All "specialty" ingredients have to be frozen and shipped to the caterer. Versus them being fresh if you are starting in the airline's primary hub.

      I worked at a airline catering company in South Africa. Food is made in large batches so you put them on large trays and they go into the walk in fridge to cool down before the ladies start packing. All vegetables are ordered in prewashed, cut, peeled etc. We literally did everything, even cheese boards. And the pastry kitchen was basically all premix ofcourse because of the quantity. Was quite an experience for me.

      Not anything related to airline procurement however its not an excuse however as you should have QA people to ensure a minimum standard. If you're flying out of a tiny remote location then not much you can do but for larger cities there's no excuse. You can also modify the menu to cover up slightly worse cooking I.e. maybe use more long life sauces you can fly in from your home airport and just pair with meat and carbs onsite.

    The inflight catering at JFK are known to be below standards as compared to those offered by foreign airlines at their home base. Even Singapore Airlines catering taste subpar when flying from JFK

    I live the little shop in Korea, that was a good way to use the space. Instead of having four or five facings of one product you have a little of this and that to appeal to the largest audience you can, without having to worry about having a huge stockroom.

    I'm surprised they didn't offer a vegetarian option. Some airlines I've gone with vegetarian rather than seafood or chicken because of how dry the meat can be

      You can usually pre book that. It’s classified as a special meal, just like a kosher/halal or gluten free meal.

    I from Finland and woulda never guess u Will fly with Finnair 😁😁 btw frye bread is pretty dry but you should use butter on it a lot. Its called Voi. Edit as a chef myself i wa sure you are not gonna like Finnair food too much, our kitchen is pretty blend

    You’ll have a blast living in Singapore. Lived there for 10 months on 2004 married on a student salary, and most expansive meal I ate was McDonald’s on New Year’s Day. There’s a tiny hawker center near queenstown Lutheran church where I used to get pratha before church and chicken rice after. During the week people used to bring their birds in cages and hang them up on lines. Could be cool for the channel. If you dont find this place you can def find another place for that does this

    I keep missing when Mikey Chen is in Chicago! Maybe one day there will be a fan meetup. Also check out Katy's Dumplings in the suburbs, or at least in Westmont. It's a local place near me, and the Beef Tendon Noodle Soup is amazing along with solid dumplings.

    Question for Mike
    Did you move out of the place in Dallas? I know that was a move you made before you met Christine (for the restaurant) and you've spent some time in St Louis and Chicago since then, and now Singapore. Just wondering.

      Mike can be pretty flexible with his life: rural New York, Seattle, Dallas, St Louis, Chicago, Singapore, etc. It seems that he got very serious with Christine shortly after he moved to Dallas, but she's from St Louis and seems to be studying in Chicago, so he really didn't have much time in Dallas. At least he shares many of his adventures with us and was willing to choose love. I wish him the best

    I know it's Mikey's job, but I don't understand how he can eat so much. I typically fly first class (or business class as they call it now), and I normally pass on the food, I pay for the room not really the food. The fact that he can eat multiple meals on an eight hour flight then go eat again once he lands and check in, is something to marvel at lol.
