I don’t like Al dente pasta it would be best for me if it’s cooked a little more. Don’t get me wrong, I don’t overcook pasta either. All in all the recipe looked yummy 👍🥰
Its ok. While cooking the sauce, I would put the pasta in that liquid so the pasta will absorb all those flavors. Yes, the shrimps probably were a bit over cooked. Though, overall, the look is great and the flavor, most likely, delicious.
Way, way overcooked the shrimp. If you cook them until they close into an O they are overcooked, rubbery and chewy. Cook them until they are pink but still look like a C
Even if nothing stays so without it much better and we can add stock or vinegar…..we can’t take any derivatives of alcohol cz we need to drive back home!!!
If you want to roast the calamri/gamba, use a higher heat and less cooking time. As seen here, they are simply boiled. Roasting provides roasting substances and thus a deeper flavour experience
Alcohol is needed to sosften while roasting, you may just add some water instead and roast a little bit more on a high heat. Besides, alcholo evaporates within 1 minutes and leaves no trace at all
Spiace dirlo,ci sono troppi errori nel cucinare i gamberi.. Troppo aglio,peperoncino e pepe. I gamberi non vanno cotti per troppo tempo.. Inoltre,i sapori sono i gamberetti e non viceversa..
In culinary the tails are left on purpose, to prove that the shrimps are fresh and real, 'coz there're fake ones made of some cheap fish fillet, once it's frozen you can hardly tall if it's fake or true one

I would suggest very little cream to sea food and shrimps, better use some butter if you want a creamy texture of your sauce! Good luck!

Use pasta water or vegetable stock
All of the alcohol will evaporate, nothing will be left.
When you light it the alcohol burns off.
