nothing hits the spot like a spice bag after a night out. I make them at home too cause, I can't feed the kids rubbish all the time, but, a proper chinese takeaway spice bag is a thing of beauty. Cheers from Cavan, Ireland

I’d not heard of an Irish Spice Bag before now after watching this I need one. We do heaps of camping and cooking on the fire, so definitely going to add this to our repertoire. Thanks for all your inspo Harry
Just an FYI , wood is the best chopping board as it is a natural antiseptic element and as long as it’s scrubbed and rinsed correctly then a wooden chopping board are the best
Research definitely still out on whether plastic or wood is safer, still leaning towards plastics, but listen we don't need to min max chopping boards, if you just wash everything it's safe anyway.
Thanks for the honesty at the end; can’t be bothered deep frying normally let alone camping 🔥 Stainless steel water bottles are great for oil & vinegar etc. I originally got one for fish sauce because fish everywhere is never fun. You can get big ones for the large sized oil bottles. As much as I avoid using plastic normally, zip lock bags are great for camp cooking, save the mess.
I'm irish and a fair few decades old and only tasted a spice bag a few weeks ago! My brother was shocked that I'd never had it and highly advised me to, oh it was good
😂😂🇮🇪as an Irish man living here in Perth for last 24 years and same amount of years before in Ireland I have never had that!however after watching your demo/ cooking class I will give it a go Harry! Our local chinese only uses medium madras curry powder, they just add some chilli powder if you want hot. I most cases i find overly spicey food rather stupid as all you can really taste is the spices, it masks most other flavours and aromas, which was part of it's original use pre refrigeration when meat went off in hours rather than days. If you like it hot go for it just save money on getting the best quality chicken/beef/pork as the heat means you can not taste much of a differance to make it worth the extra bunt. Try looking up chipshop curry recipes that is most common i have found while pissed up, it cheap and tasty which is why the trailer parked outside of the clubs use it. Thanks for the video, take care, God bless one and all. BTW I buy Dinaclass - Irish Curry Sauce (5kg tub) £26.79 delivered to my door. 500 g (1lb) of mix to 2.5 litres (4 pints) of water. Bring to the boil while stirring and allow to simmer for 10-15 minutes.
You have given a spice bag far more respect than the locals Chinese’s places here do, this is display of soul food. I personally like to flash fry then bake my thighs for a crisp and tenderness. I understanding the level of commitment to filming and cooking this is well produced and made with love. Well done sir 👏👏👏

just a tip mate, you can buy McDonnells curry sauce which is very similar to the real thing, we have in Ireland. Certain coles have it in the international section.
Great video! Never actually had a spice bag but it reminds me of the “3 in 1” back home (Ireland) that I used to get in our local Chinese takeaway. Fried rice, chips & curry sauce all together in a plastic container with a fork. After a few pints you’d devour it!!!Thanks for the videos.
So in August or 1990 a chef in a chinese resaturant in Finglas is finishing up for the night whn he hears a knocking on the door of the take away. Outside are four deperate, drunk and very hungry hombres who are beggin for a birra grub. The chef being a kind hearted man does not want to turn away the customers so he tells them to wait a bit and goes back into his kitchen. He finds all the leftovers from the day, the last bits of unsold fried chicken, a few old chips at the bottom of the frying vat and some old veg, he fries up the lot, puts it into brown bags, slaps on a generous dollop of curry sauce. The lads were delired with their post pint feast. The rest is history.
Was lucky enough to hold out until I visited Dublin to try a Spice Bag for the first time. My host was amused I even wanted to try it but humoured me anyway and it was as you say, the perfect post beer food. Yours looked excellent and I'm sure you will cook it again sometime soon!
Very interesting comments at the end, the spice 'bags' always look so good when you see them and i always thought they would be so bloody good, cheers.
They are good, just no one makes them from scratch like this. You can buy the spice mixes in Ireland, the batter mix, the chicken precut, and you kinda make your chips yourself from your potatoes or if real lazy frozen ones. Its literally a 5-10 minute job for drunk Irish people to make one. However we wont turn the fryer on when drunk so order one, and nothing matches the one from the chinese. But from a chinese in Ireland you can just order chicken and chips. I usually get Chicken balls and chips, or lemon chicken and chips... Chicken balls and chips are chips with balls of chicken done in batter, and lemon chocken its like a chicken breast in a light batter thinly cut, with a lemon sauce... Spice bag is a bit too much for me.
Back in the day my mom used to save the used cooking oil in a container and put in fridge then later put in pan or deep fry again for cooking the fish my dad and us used to catch out in the boat and it got reuse a many times probably collected more flavours in time but when it started to go black it got tossed out , will live for ages in fridge I recon , I haven't done it because I don't deep fry any thing , I oven bake stuff not the same but healthier I hope , the oil goes hard in a container in fridge just like fat or lard used in them days , that meal looks fantastic thank you the Irish and thank you for cooking it up 💯👌I guess if you're out on the grog and at 2am you find a pie van and they served that up you'll down it just like dowin a pie floater , I bet you don't know what a pie floater is 😅
Spice bag can be much simpler: Spices - mix of salt, five-spice & chilli flakes along with a few other bits (they now sell it pre-made here) Diced chicken - doesn't need to be breaded + bell pepper chunks + onion + a few small chillis and loads of the spice-bag mix .. tossed together in a wok until cooked Add some chips etc - and damnit .. It's mostly a "dry-rub" type spice set .. rarely served with curry sauce (unless you're paying extra for it! ) - though the chicken is usually breaded from the take-aways
Fantastic effort, doubt you would be capable of some of that if you were hungover or inebriated. Nailed the brief though, love that you put the oil in a drink bottle then pull out the 3lt container to fill the skillet. Nice brown paper bag meal. Looking forward to Fred's feast
The double bag is an absolute must as you drunkenly swerve through the sidewalks to ensure you don't rip it open and spill all over!. Looks great and can't wait for the next one!
