Smoked Turkey Legs in a Pit Boss Pellet Smoker

  • Smoked Turkey Legs in you pellet grill or smoker is easy to do and it tastes awesome. Theres nothing better than grabbing a smoked turkey leg and eating it caveman style… knaw away at that juicy, smoked turkey leg and it doesn’t get much better than that.
    For this smoked turkey recipe, I kept it simple with a brine that is made up of:
    16 cups of water
    1 cup of salt
    1 cup of sugar
    1 cup of brown sugar
    1 Bay Leaf
    2 Tablespoons of your favorite smoked turkey rub
    The turkey legs go in the brine for 24 hours.
    For our smoker today, we are using our Pit Boss KC Combo Pellet Grill with the Competition Blend Pellets. You can use any kind of smoker for this, you just want indirect heat and to set it at 250 degrees Fahrenheit.
    Cook your smoked Turkey Legs until it reaches an internal temperature of 165 degrees and then I brushed on a little bit of BBQ Sauce that I thinned out with apple juice.
    Put the Smoked Turkey Legs back in the pellet smoker for another 15 minutes and serve.

    I can never find a big beautiful turkey leg like that at a grocery store. I didn't even see them at the butcher last time. I love smoked turkey legs...and just like you said reminds me of one of the best things you can get a Disney World :) I have never seen that smoking tube. Love that brine...best way to do turkey !     The smoke tube works, if you are finding your pellet grill is not giving you enough smoke flavor do the smoke tube!!!

    Thanks for the tip of the vegetable spray. I did it after an hour in. Fairly crispy. Wasn’t heavy spraying. Just liked you showed. Made a difference for the Turkey skin in my smoker. I wonder if I went earlier with spray more crispy? I will try different types.

      Thank you, Ryan! I love the turkey legs because they are affordable and take in great smoke flavor without too much effort. I went to a 4th of July party about 10 years ago and the host hires a bbq catering company and they must have smoked up about 200 turkey legs... and some other sides... it was so awesome... everyone walking around like a Viking eating a smoked turkey leg (and holding a paper plate with potato salad and the other sides lol).

    I got a smoker tube last year... cannot believe I did not figure to light it up. I think there will be some extra tasty Bar-B-Q at my place this summer ! Especially with the 50 pounds or so of cherry limbs I pruned : ]

    Hey Mike. thank you for taking the time to make these awesome video! just wanted to ask. last weekend i made these turkey legs.but i think i messed up on the salt for the brine.( was told it was too salty.i kinda was.). i only added one cup of salt and one cup brown sugar. BUT because i skipped the white sugar, im guessing thats why it was so salty?

      Thank you. I think it all comes down to your own personal tastes but what I would do on the next one is make sure to rinse them off really well after the brine and also brine them for less time. I dont think the choice of sugar had anything to do with it.

    Those look amazing. I have been watching your videos on the KC Combo as I'm looking into getting it or the Pro Series 1100 Pellet and Gas Combo. It will be my first smoker as well as my first new grill in years (new house..LOL). The one thing that keeps me looking at the KC Combo is the griddle. I'm not sure how often I would use it but I have been wanting a griddle for sometime as well as a pellet grill. Can you recommend one over the other, not taking into account me possibly wanting a griddle. I'd like to know which you think would be a better buy. Thanks!!

      Hi, Brian! I think if I had to choose between the two combos I would probably go with the 1100. For some reason the new PID controller in the KC Combo doent put out a strong smoke. I think the 100 still has the old style controller which will give you better smoke flavor. Just my opinion though...

      Thanks, Ricky. The brine is optional but strongly recommended. It adds flavor all the way down to the bone.

    Great cook Mike! I think many people aren’t aware of how great turkey is on the grill or smoker. I’m partial to the leg, but my wife likes the breast so I occasionally grab the pre-packed bnls breasts and brine over night like you do. DELICIOUS!
