Try using sand paper to clean where the wires clamp on, or even attach them with something better than alligator clips; fatter wire could help too. Just a random guess tho. Cool that you can diy coat that easily.
Honestly, 8 days is very good time from a company! And they do it properly, usually a lot better, more consitent and more longlasting. And they can use proper chemicals plus know how to depose the used chemicals properly.

Devin mate at the end of the day even though you want the bolts to be clean you got a look at it like this you're not going to see them staring at you in front of your face all the time so I wouldn't get too OCD about it because most of them where they've got some blemishes is only around the threads and you're not going to see them because all you going to see is just the head exposed not the threads it looks perfectly fine and clean awesome and JDM as it is

For my car’s hardware I’ve been glass blasting, denatured alcohol, Super Blue Liquid Gun Blue, and then steel wool to make it a nice even finish. You can dip a bunch at one time but then the steel wool takes a minute to hit one by one. Not sure if it’ll last as long as what you’re doing but it seems a little faster and it’s a nice gunmetal gray finish.
Devin, I wonder what would happen if you ditched to copper bar and just ran that 20 gauge copper from end to end of the bucket. Also I wonder if the acid dip is not fully coming off and messing with the zinc process when you dip it in the clean water. Maybe being very picky about getting the acid off might induce better results?
I believe your issue maybe a prepolish before you dip them. Try hitting them with a soft wire wheel or some kinda scotch pad wheel after sandblasting than try your dip, it may eliminate your spotting etc. idk
They sell those cleaners that vibrate i forget what their called mainly used on electronics but I do believe it heats up and can be used for this exact solution for zinc plating edit ultra sonic cleaner

Get yourself an ultra-sonic cleaner, bro. Makes SHORT work of de-greasing parts. I've had one of the little harbor freight ones and have cleaned COUNTLESS shit with it and a decade later...she still purrs.
Is using the "emergency lights" while towing allowed? Seems unreasonable - how can someone tell if you're going to turn left or right? Other than that - great vid as always! :)
