  • Bathua (Chenopodium album) also known as goosefoot or fat-hen in English is a vegetable (saag) which is specifically available in the winters like spinach(Palak) and methi etc.
It’s highly nutritious as it is rich in fibre but easy to digest and it also aids in weight loss, anti-inflammatory, contains vitamin A, C and K etc.
    Bathua ka paratha:
    Recipe:
    1. Remove the leaves of bathua and wash them and keep them aside until they remove all the excess water.
    2. Now cut the leaves into small pieces.
    3. Add 2-2 and 1/2 half of wheat flour in a bowl for the dough preparation.
    4. Now add 1 teaspoon of Ajwain (carom seeds), 1 teaspoon of chilli flakes, 2 -3 cloves of chopped garlic and salt as per taste.
    5. Add 1 tablespoon of oil and start mixing everything.
    6. Now add bathua leaves and keep on adding little water and prepare a soft dough and let it rest for 15-20 minutes.
    7. Now take small portions and prepare a paratha using a rolling pin.
    8. Prepare it on a medium low flame and add 1 tablespoon of ghee or oil.
    9. Now your paratha is ready to eat!!
    10. Enjoy it with any vegetable, chutney or curd.
