As a Gujarati let me inform u that the cut Methi leaves are to be mixed with Salt and kept aside for 10mins approx to remove the bitterness. Thereafter it is washed and then put into the dry atta and then made into a dough. Theplas will dry out if u do 8-10 together so that's a no no. Also they are always cooked on low flame not high as that kills the nutrients capacity.

Thepla is all time fev. Travel food. In authentic gujrati recipe no green chill use red chilli powder n garlic, n serve with ginger tea, dahi, or shirkhand. Or pickles
