  • Everyone needs to try this recipe. I could sit and dip chips in this cheese at every meal, I think. I like that it has lots of fiber and nutrients. It's a little cheaper than some recipes because the base is made from potatoes and carrots. It is bursting with flavor!

    Forget the "affordability" of this recipe vs a cashew cheese. I have a nut allergy and THIS is the only recipe I found that's an alternative. Thank you

    I'm a whole food plant based vegan and don't use oil for health reasons, so I just throw a handful of cashews or sunflower seeds in to boil with the potatoes and carrots to replace the empty oil calories. Cuts the price and calorie load of using only cashews and adds all the benefits of using mostly veggies! I make a full blender batch and use it throughout the week, it's so yummy and versatile. If I haven't used it up by the end of the week I make a simple soup by thinning it with plant milk or broth, heating it up and adding any or all... cooked broccoli, cauliflower, diced white or sweet potatoes, onions, carrots, pasta, etc., and add a can of any kind of beans or lentils with the aquafaba liquid, and whatever spices. Quick, easy and healthy.

    Instead of oil, I added 3 tablespoons of roasted cashew. Instead of 1 tablespoon of lemon juice I used 2. Instead of 1/4 teaspoon of onion powder and garlic powder. I used 1/2 teaspoon of each. It was delicious! Thank you for the idea.

    Using a stick blender was easier. Added 1/8th teaspoon of liquid smoke for that smoked cheddar-ery taste, and didn't use any oil and turned out fine. Threw in a couple healthy pinches of ground-up pistachio nuts for that nutty (tahini) flavor, almost any kind of nuts would do; walnuts, almonds, pine seed nuts, hemp seeds, and; of course, toasted-roasted sesame seeds.

    Why are you adding olive oil? You don't need it for this type of plant based cheese sauce. Leave it out - you won't miss it. It will be much healthier and less calorie dense.

      Well it depends
      It's not less healthier to put olive oil, olive oil it's one of the best fats you can eat. For most people having a balanced diet, I think this will be a good addition. In my specific case I actually need more caloric food, so I would probably put it
      But you can remove it if you like and if you think it won't be necessary for your health

      I’m not sure I’d call this cheese exactly, perhaps for starting kids out vegan…But it really was delicious. Then again I used a food processor, so maybe it would have been cheesier had I used a blender?

      Not a problem! Just substitute water or the liquid you cook the potatoes and carrots in.

      Definitely! Usually I add it 15 minutes before the lasagna is done baking.

      She did show us the consistency. She poured it into a small glass bowl. She also had a photo of it at the beginning. I made it, and the consistency is great.

      Just make it without the oil. I did. I added 3 tablespoons of roasted cashews. It is delicious.

      This cheese does not elevate your cholesterol. It doesn’t have dairy products nor saturated fats that increase your risk of insulin resistance. According to modern scientific peer-reviewed studies, insulin resistance increases the risk of fatty liver, erectile dysfunction, coronary artery disease, atherosclerosis, hypertension, obesity, etc. That is why we want to make this “cheese sauce”. I made it without the oil, and made great mac&cheese. My husband loved it.

      I used to love cheese too but as I have a family history of cancer I only eat plant based now so to avoid all the Estrogen and Progesterone in dairy.
