Sometimes pizza sauce with peppers, onions and mozzarella cheese add some pepperoni...Delicious ! But an enroll quesadilla ? I gotta check that out ! As always God Bless !

Going to try this using quesadilla cheese and canned mushrooms, and making it into an egg omelete instead of using flour tortillas. Topped with sour cream that have chives in it. Love how you encourage watchers to tweak the recipes to their taste.
Hi Gina. I love love your recipes!! U can also instead of using oil in the pan to crunch up the tortillas, take butter & a knife & slap that butter on and crunch it up. It is very very good & tasty.
