  • Snowy Mooncake with Custard Filling 冰皮奶黄月餅
    香甜, 軟糯不膩 Soft, Fragrant and Sweet but Light
    Snowy mooncakes are a lot easier to make than traditional mooncakes because there is no baking involved. It is served cold and the wrapper is semi-translucent, making them not only look pretty but also super delicious!
    冰皮月餅比傳統月餅要好做一些,因為沒烘焙的過程。它是吃冷的, 冰皮是半透明, 非常漂亮又可口!
    Ingredients (材料):
    Makes 12 x 50g Mooncakes (做12個50克月餅)
    Custard Filling (奶黃餡):
    Egg yolks (蛋黃) 3 - egg weights approx. 60g with shell (雞蛋帶殼重量約 60克)
    Caster sugar(細砂糖) 50g
    Skimmed milk powder(脫脂奶粉) 20g
    Low gluten flour/cake flour (低筋麵粉) 20g
    Cornflour (玉米澱粉) 20g
    Milk(牛奶) 170ml
    Melted unsalted butter(融化無鹽牛油) 50
    Snowy Wrappers (冰皮):
    Glutinous rice flour (糯米粉) 45g
    Rice flour (粘米粉) 45g
    Wheat starch (澄粉/小麥澱粉) 20g
    Icing sugar (糖粉) 30g
    Milk (牛奶) 140g
    Sweetened condensed milk (煉奶) 20g
    Corn or vegetable oil (玉米油或植物油) 30g
    Others (其他):

    Beetroot juice (甜菜汁) 1 tsp (茶匙) - optional (自選的)
