- Meet Ray Santiago, Sally's Quality Control and Head Trainer. Ray has been making pizza at Sally's in New Haven, CT since 1973, and plays a pivotal role in passing on the Sally's way to perpetuate the legacy of our founders, Sal and Flo Consiglio.
I went to America on a holiday and took an almost 3 hour train from New York to New Haven just to visit Sally's. It was well worth it! Much love from Ireland!
Thank you Ray and the rest of the staff at Sally’s. You all take good care of us. I’ll see you Friday.
Thinking about flying from Seattle to New Haven to get a slice or ten of Sally's. God bless you Ray for keeping the passion alive.

Legendary story, I worked at a dominos as a dayshift manager riding the make line solo everyday 5-6 days a week for 4 years in college. No where near the experience these guys at Sally's have but I had to live by Ray's saying "making it right the first time takes less time than having to remake it." I probably prepared/cut tens of thousands of pizzas in those four years but nowhere the probably millions of pies that Ray's seen. from a past pizzaiolo to a legend still in the game my respect for Ray is over the charts. Pizza is pizza but good pizza is an entirely different story and great pizza is a master craft, thanks for everything you've done and continue to do Ray.

From my experience Italians love Puerto Ricans. They’re 2 nationalities that you wouldn’t expect to have such incredible chemistry and similar sense of humor. That’s probably what we’re seeing here with a guy as loyal as Ray Santiago.
I’m Puerto Rican and Italian, specifically Napoletan. I make pizza. Nice to see the camaraderie between Ray, Sally, and the Consiglio family.
Drove from West Virginia to eat here. Was blessed with conversation from Ray too! I experienced this 17 years ago and yesterday I gave my wife that opportunity. Amazing as always! Thanks Sally’s and thank you Ray!

He is so on point having worked pizza places and been involved in a family restaurant business it is hard LABOR VERY HARD LABOR. BUT SOMETHING YOU LOVE TO DO AND YOU HAVE TOO TO DOIT. Great guy great pizza. It is also very hard to maintain his up beat spirit and sense of humor.
Wow! You can say I’m exaggerating but couple of tears came down my cheek.. the words that ray had for sally are something else. Real proof that good bosses and most importan good people live forever.. keep it up Santiago! I’m sure sally is watching all from above proud of what you have become.! Cheers from South America.. Incredible view into the back end of Sallys, never saw something like this like I have for some places like Modern - Sallys is always too busy to dine in at haha. Ray seems like an amazing pizza artist and at the end of the day is what makes New Haven pizza the best in the world! If there's one thing that makes New Haven pizza spots great it's always the experienced chefs in the kitchen. I've seen interviews with chefs from Modern, Zupps, Pepe's, and now Sally's and every single one of them seem like stand up people just out there making incredible pizza - and yes, lets hope you do go another 40 years Ray, best of luck!

Yesterday, Got there when it opened... got the plain tomato pie with a Foxon Park Kola(local soda company). The sauce was natural with ample coverage... no dough peeking through it. Grated cheese at the table (the real parmesan, not the cheap powdered crap you buy by the truck load)... I was in heaven. The most basic form of Apizza you can get.

I drive sometimes 3 hours just to get this pizza at the original location. It’s worth it every single time. Very rarely do you go to a restaurant for the “experience” but Sallys is the exception. The pizza is unbelievable, the atmosphere is incredible. Sallys will forever be the best damn pizza joint in the USA. I also recommend you try their cannoli pie… it is to die for.

It's among the three best pizza I had in my life. The other two are De Lorenzo's in Robbinsville, NJ and Angelo's Pizzeria in Philadelphia, PA. I love them all the same.

What do you mean? Everyone knows about sallys and new haven pizza in general. Its blown the fuck up! So much that pepes has chains in malls now, which sucks btw and cheapens it

I am ashamed to admit that I have never been to Sally's, even though I live 28 miles north of New Haven! I hardly ever go anywhere in that direction, but I am definitely going to go now! I have been to Pepe's twice with two different people who were set on going there but when we stopped to ask a construction guy for directions to Pepe's, he told us that he preferred Sally's, but my friend was already set on Pepe's. My first job was making pizza and setting up a salad bar in Pennsylvania and I loved it! I am still working as a cook, but it is taking a toll on my body. I have worked in restaurants, factories, offices and nursing home kitchens and the only coworkers that I have kept in contact with are the ones from my food service jobs! There is a strong bond and it's a lot of hard work, but the people who you work with are like family and there is a connection like no other! I would love to work with Ray! We need more of the old school employees who take pride in their work!

I worked For Lucas Pizza in Mcallen Texas as a kid. I made the Stromboli and calzone. Also worked for Dominoes, and Papa John's delivery. Now. 8 year pizziolo. My own recipes and place. Make it Great. And Be The Great. As you can be. 😅❤

discovered you through Dave portnoy and his review. just need you to know that that 9.2 is about as 10 as you can get. there are a couple tens out there but often the only apprehension from Dave going higher is that he's not sure if he's setting the bar too high so that no one else can compete. you are doing a fantastic job and the public loves what you're doing. can't wait to try it someday!

@@lbcoach2295 I drove from LI to New Haven today, sadly it wasn't worth it for me. The pizza was bland :( I was so disappointed. Sauce was good, it was Savory. Crust was thin and had a great char. But it had no flavor. Definitely go and try it and see for yourself though. I'll be back in New Haven to try Zup's, Frank Pepe, Bar, all the others.....

last month i went to Sally's in Stamford. Then had Sally's in New Haven the next day..Yeah crazy... Different pizzas, Stamford was basically not edible.. New Haven was amazing..This is what happens when you get greedy and over expand..You can only have so many Ray's...
