The Best Show in town!!! Both patas look so delicious as they both sounded so very crispy and crunchy. Health wise I prefer the one that was airfried, less work and less cholesterol. You always do a great demo, Chef Vanjo. I just fixed airfried belly chicharon from scratch today for lunch. Oh, it turned out so good.😍😍
Very clear presentation. I would choose to cook the safe and easier way... air fryer or turbo broiler. But the crispy pata is for the younger generation. Na-enjoy ko na yan and okay with me to eat only foods that would not add harm to my body.😉

I do mine in the oven. Skin is so crispy, meat is moist. I chill the pata overnight after massaging it with vinegar, salt, pepper & garlic powder. Sooooo yummy!!!!

I still "prefer" the traditional deep-fried version...because I don't have an air fryer & don't have a choice 😁 But like you, I also prefer to boil it first so I'm sure the insides are cooked. Hey, they are both bad*** crispy!!

Agree ako dyan pero itong air fryer ko mag 3 yrs na mula nung bilhin ko pero ni minsan di ko pa nagamit dahil nabili ko na nung makabasa ako ng negative reviews- mahirap daw linisin yung mga gamit nya sa loob. Kaya back to the conventional oven ako. Katatapos ko lang lutuin ang crispy pata sa oven kanina. Matagal nga lang lutuin kasi low temp (180°F) for 8-10 lbs pata sa 5 hrs. Then, increase the temp to 320°F, another 2 hrs. Finally, sa 430°F for 30 minutes. Yung unang try ko nasundan ng maraming beses. So yummy and super crunchy ng skin.

Have you tried the "Insta Pot" to boil the meat? It will take less half the time using the regular pot. It has the option of low, normal or high pressure. And it gives the meat more flavor from the ingredients. I prefer the air fried pata.

Parang kelan lang nung yung camera either nasa head or chest in kuya. They used to give me vertigo, pero napaka interesting ng videos and madali sundan kaya nag stick ako. Never regretted it one bit. Congrats po~ ☺👏👏👏

Just from observation. Deep fry, the skin looks a bit crispier. Air fryer, the meat looks a bit juicier. Either way, I would be happy to eat both.
