Hello Arnaldo. I have been to Crete many times and this looks very much like the Stifado I had there. Stifado is probably my personal favourite dish of all the greek dishes. I have tried to make Stifado a few times in the past, but the meat never seems to get very tender. I have tried to cook it for 3 hours but it still didn't reach the tenderness I was hoping for. Any ideas on how to get very tender meat?
Hello Tdesting. Sorry to hear you haven't had much success with the Stifado. To be honest with you, I can only think of one thing, that can go wrong... I can only tell you how I prepare it! Fry the meat in two batches; when first the meat is placed in the pan, make sure the hob is high and the oil is very hot to seal all the juices in, then turn the gas down to medium. If the oil is not hot enough the meat looses its juices and therefore becomes very tough. Allow the meat to brown well before you turn it over to fry the other side, but, at the same time keep an eye to prevent it from burning. Avoid fatty meat with veins!!! I use stewing meat already diced. One more thing!!! Once all the ingredients are in the pan, minus the onions, always cook on a very low heat. I hope I have been of some help to you. Wish you luck. you can use cinamon and nutmeg but All spice is the spice used
