I actually got to meet Blair in October at a boat ramp on the east coast and I was like a little kid....got my picture with him and everything 😆 Pretty cool getting to meet a "fishing hero" of mine. My son and I also got to meet that JC guy from Rad Reeling at a bait shop in Nokomis one early morning last spring...he's a pretty good guy and fishermen too 👍
JC , I’m the one who gave you the fiddler crabs at the Jetty. Boy you make it look easy filleting those sheepshead , I’ll try it again . Did the crabs work for you ?I did catch a nice Jack Cravalle that day !!
Use a curve blade skinning knife along the back bone and it finds the flap. Heck I can barely see those 2nd and 3rd spines anymore let alone poke a knife in there 🤣🤣 Caught a bunch of shorts yesterday (only keep 14-20) so video timing was perfect
A sharp knife and anatomical knowledge work for me. You missed a huge chunk of head meat, that fillet goes all the way up to his eyebrow I outline them , then stand them up and fillet down rather than sideways, Get all the meat off, you can see where the bones used to be on the fillets.

That fish is easily 12 inches. Definitely a keeper. He releases 99% of the fish he catches. You really think he's going to keep an undersized fish? Get out of here.

I find if you refrigerate your fillet for a few hours it is much easier to trim the red meat. Happy fishing

Your so wrong, sheepshead are one of the best tasting fish there is. They have a big head and hard ribs, the bigger they are the more meat.
It can't be any harder then trying to clean a hard head cat fish man I tried to do it was very hard

Put a damp paper towel under ur cutting board and it won't slip around like that

Sheepshead have to be 12" long to be legal. There is no way that fish is 12" long.
