For Apollo Boeing's contributions were limited to building the first stage of the Saturn V (basically 2 big tanks and a shell) and installing 5 engines designed and built by Rocketdyne. They had no involvement with the CSM or the LM.
You badly underestimate the engineering requirements when engineering something like the Saturn V! The whole assembly is a dynamic structure with three stages that must not fall apart when mighty explosions in the three engine rooms shake them to the stress limit.
