Never would've thought Cowboy Kent being on this channel but I am so glad. He's a freaking legend! You'll notice a LOT of chefs put honey in their sauces and it's not only to balance out the flavors but also to tighten the sauce up. Bobby Flay does it quite a bit.
I've been watching Kent Rollins for a few years. He's a cook for cowboys doing herding, etc. He's a great cook and does shows sometimes in towns. He just toured last year. He teaches you how to cook anything outdoors, and he loves his dogs! 🙂
I love crispy fried chicken! The crispier, the better. When i was little, and my grandma fried chicken, she always made it crispy, and any pieces of the crispiness that was left, she scooped out of her cast iron skillet and gave it to me. So good!

So glad you found my man Kent. Been watching his content for years. Started watching his channel when learning how to use cast iron. He has some great recipes and my favorite is his chili recipe and huevos rancheros recipe. You should definitely watch more of his videos
I find it fascinating to watch him cooking with coals on the cast iron pot. It's pretty impressive how he can regulate the temperature of the pot just by repositioning or adding/removing pieces of coal. He can keep maintain a temperature with coals better than I can with an my electric oven.
I think the pickle juice is also used to marinate Chick Fil A Chicken Sandwich Chicken. Korean Fried Chicken also is very crispy and they use cornstarch or potato starch also for crispy texture. Korean fried chicken is also extra crispy because they fry their chicken twice- Double fry them.

I have all 3 of their cookbooks and have met him in person at a book signing where he signed them all. And he's is just 2 days older than me. More Kent Rollins reactions please.

I love this guy - I've watched his videos for quite awhile and used some of Kent's recipes! He so down to earth, makes you chuckle - while he cooks outdoors which is great for our Ohio summers here - most of what he cooks you can bring indoors too! Careful, you'll get hooked on Cowboy Kent too!! You know - you can make the same chicken and make a thick chicken gravy and a big pot of mashed potatoes - and cover that chicken with gravy and the potatoes (make ya some green beans!!) And you have a great (still crispy but a bit softened fry) fried chicken and wonderful mid-west dinner!! YUM!
If youre getting a stomacheache the oil wasnt hot enough its not to be greasy when its cooked theyve left it to cook to long at a lower temp. Yes, i can cook about 45 years

I would suggest that if you watch future videos of him, don't stop the video until it runs out; a lot of the time, bloopers from shooting the video will be tagged on at the end. I can't remember if this one does, but they're worth seeing when they happen. 👍
You don't need pickle juice. Vinegar does the same job. (in case you're like me and don't like pickles) Edit: The pounding of the breast also helps break down the connective fibers, which (along with the vinegar) create very tender chicken. Edit 2: What he didn't mention is whether to use whole eggs or just egg whites. The egg whites are great for binding the coating and getting crispy outside. If you use the whole egg, it's a little softer because of the fat content in the yolk.

I've never watched him before, but have other TH-camrs mention him. Mr H and friends (fellow Brits, if you haven't checked them out) just bought a cast iron smoker from the US. (They live in Bristol - you all should hook up after they do their first brisket. :) They mention him often, I believe.

There's ways to sauce crispy chicken by itself or in a sandwich that they have the beneficial quality of being crisp but not eat like a hard item. Check into those and actually taste them from someone who's prepared it with those options.
Definitely do more Cowboy Kent... Even if his recipes tasted terrible and his cooking skills were bad I'd wager he'd still have a big following due to the cowboy lifestyle and cause of the guy he is. Great vibes especially when lots of food TH-camrs tend to trend the other way with lots of energy and trying to be funny all the time etc
