  • Jamaican Curry Chicken
    3lb Chicken (Drumsticks and Wings)
    5 tbl sp Jamaican EasiSpice All Purpose seasoning
    5 tbl sp Jamaican curry
    1 tsp fennel seeds
    1 tsp pimento seeds/allspice
    1 thumb of ginger
    4 cloves of garlic
    3 sprig thyme
    2 carrots
    ½ onion
    1 cup chicken stock or bone broth
    2 cups of water
    Direction
    Wash the chicken with the juice from the lime/lemon and or vinegar. Drain away all the excess water from the chicken. Dry with kitchen towel if necessary.
    In a kitchen bowl, add the all-purpose seasoning, the curry powder to the chicken and mix well.
    In a pot add cooking oil and curry powder over medium heat.
    Add the seasoned chicken to the oil. Let the chicken brown on all sides.
    Add water, chicken stock, all spices and vegetables to the chicken in the pot. Cover and leave to cook for about 40 minutes, or until the chicken is cooked.
    Add arrowroot/cornstarch and water to the chicken. Stir until it’s reduced to a curry gravy.
    Serve and enjoy!
