This must've took a lot of planning, story-boarding, and fried chicken researching. The effort behind this is levels beyond other food channels.
The intro with all the crunch in the editing really set the tone of the video.

Wow! There is obviously an audience for this kind of in-depth experimentation, so keep going, but I started flagging halfway through and FF to your ultimate recipe, which is all I really cared about. I trust your taste and cooking ability - nothing to prove there. My husband and I have made more of your recipes than those of any others. I already know what kind of fried chicken I like best. We can’t get enough of your videos because (besides the incredible editing/staging/photography - go Team Marion!) we can’t get enough of your great personality and actual love of the food you do so well. You can do no wrong! Just maybe do a cut of this vid showing just your final recipe and link it to the lengthy research for those who want the behind-the-scenes bits. Anywho, rock on Marion!! We love you.

I’m loving your cooking ideas. I’m from Canada and visited my aunt and uncle in Surrin for 5 weeks, oh it was like heaven. We ate fresh food daily, my favourite food is Thai food now. Even though I have a life threatening allergy to all alums (garlic, onions, shallots, etc) the food still tasted great. Now I try to follow you and the videos of my aunt cooking regularly when I can get Asian ingredients.

My favourite: Definitely chicken Schnitzel Vienna Style: Fried in half oil half butter on low heat until golden brown, juicy inside, crispy outside. Coating: Flour, thin layer, second coating: a mixture of beaten egg, spices, mustard, third layer: fine bread crumbs mixed with paprika powder. The schnitzel must swim in the butter and has to be drizzled with butter all the time. Thank you dear marion for the incredible effort you put into this amazing teaching video. You did genuine scientific research 🤩😘

Loving the new editing & structure! I always liked the previous quieter, sophisticated cinematic style (other than the v artsy slow zoom-ins they did for a while. as I prefer the more instructional shots) - but I absolutely love this new editing approach. I'm terrible at remembering things! However, if there is a logical reason for doing things a certain way, I'm better able to figure things out instead of relying on my memory. Plus, it makes it easier to apply that knowledge elsewhere.
That's what you do, Marion. Your videos educate viewers with knowledge rather than merely presenting a recipe.

OK....Marion....GREAT VIDEO! Like you I absolutely adore fried chicken and like you, LOVE really crunchy coatings with a succulent juicy tender inside. I have tried, at one time or another, several techniques that you did here. As a lover of Japanese tempura, I find I get the best results with tempera flour + corn starch for a light and very crunchy coating, but never thought to do a wet or a dry brine before hand to increase the "juice" factor. Guess you know what I'm going to try next......Thank you for your detailed study of the ultimate fried chicken.

Bryan from Canada. This was one of the most interesting vids I've seen. Long yes but more informational than I've seen from anyone. Have been watching your channel for years and want to say how much you have inspired and changed my cooking techniques and flavors from around the world. Thankyou Marion!! Big huggss!!

Thank you so much Bryan! What a lovely comment to read :-) I really loved the experimental nature of doing the video and I actually learned so much...so hope everyone else finds it useful too!

Hi Marion. I use a flour and potato starch blend about 50/50 . Very crispy. I love all your recipes. Bless you and your family. Hope you try the blend. Much different then the corn

We should do this for all kinds of protein. Seeing different ways to cook is so educational.

Marion, you are a warrior for doing this. Way to take one for the team eating all of that fried chicken, lol. I feel like I should be singing a paraphrased Queen’s “We Are the Champions” to 🎼“You are THE Champion, my friend!”🎶 Brava!!!

I actually think the method in your 10 (15) minute fried chicken video works great! It's my go to! Double fry and play around with the spices

So wish you had of tried potato starch to compare. I use it for my karaage. I will do a test to compare to the basic flour salt, double cook method. I keep cooking different ways but never like this which is the best way to compare. This has to be one of your best videos. I love test kitchen recipes to learn from! Thank you Masterchef!
