One of my favorite dishes of all time! My mom used to make these with refried black beans. Sometimes they were round and sometimes they were pointy ovals, like little boats. Today I'm making some with refried pinto beans, chicken, jalapeno salsa, cotija cheese, cilantro, lettuce, and crema. ❤️

I'm gonna buy a comal to make sopes and use it for roasting the chiles, would the same comal be ok to use for both or should I buy 2 different comales?
Yes you can. My mom never deep fried them but would toast the bottom of the sope on a comal. She would just add a little bit of oil. They are delicious both ways.
Not sure how authentic this is, but I use a propane torch used for cooking, to char the skins on poblano and tomotillo, and wrap it it aluminum foil. It does a great job and you can do the whole poblano evenly.
