I am a diabetic with gluten/grain intolerance, is there a non grain , low carb flour or combo of flours (almond, lapin, coconut) that could be used for baking? I would love to make some of your delicious recipes. I know you are not a low carb channel, but you are such an amazing chief, I thought I would ask for your thoughts. I hope you can provide me with your advice.
Well, first of all, thank you so much for your kind words, I really appreciate it! Now, regarding your question - on one hand - you see, I am NOT a medical professional, but merely a pastry chef. On the other hand, I see that you (unfortunately) have a rather complicated situation regarding your health, so I am extremely hesitant to offer any advice that could (God forbid!) harm you in any way. I think that this task requires assistance of a trained medical nutritional professional, so all I can suggest is that you seek that advice from a said medical expert. I'm sorry that I wasn't able to help you and hope that you will find the solution elsewhere. Unfortunately, there is no one formula that can substitute sugar and wheat flour to make a cake/donut/dessert gluten and grain free and keto. God speed!
Hi Pastry Maestra! I was not asking for any medical advice, but thank you for your concern. I was asking for substitute ingredients instead of wheat flour, such as almond, coconut, lupin, etc. or some combination thereof in order to be able to use your recipe.
