    I love it. I made it this morning and it looks, smells, and tastes great! Coconut is the "secret" ingredient in this cake. It adds something to the cake without tasting like a coconut cake.

    Nana, I love watching all your videos. You are as good as Julia Child and it's so awesome that your grandkids produce your shows. Sometimes I cry when I watch you because you remind me of my own Grandma who we called Grandma Honey and she always cooked and baked with us when we were little. Thank you for all you do.

    Thank you, I made this cake and it turned out very nice. I have also made a few other of your recipes and have had success. I appreciate how you explain things clearly. I live in Australia so I usually have to convert temperatures and ingredient measurements but that's ok

    Gloria, thanks for sharing the details, step by step of your cooking ... it makes me feel like I'm in the kitchen watching you. A lot of cooks don't do this on the cooking shows and it is frustrating when you miss an important detail of the recipe. You're the best.

      This is Steve, and he makes the breadmaking look so easy. I like his videos and hope to be able to make rolls like Steve does with some practice.

    I just pull out my 1st carrot Cake out from the oven . love your videos it's like cooking with my sisters. I too am a Nana. and will bring the cake to my Grandchildren house. p.s.     Great recipe, almost identical to mine. I add nutmeg and 1/2 c crushed pineapple and eliminate the coconut as my kids don’t like it. I love your blooper and laugh. You make me a happy baker.

    Hi Nana This sounds and looks like a great carrot cake recipe. I am the whole hog type for the frosting. I might bake this for Xmas holidays. Cut it into small cubes for a cookie tray. Here are a few of my tips. I always toast my nuts before baking with them. They turn out crunchy & more flavourful. Also, always keep your nuts in the freezer. They do spoil easily - especially walnuts. Freeze them & pull from the freezer as need. You can even toast then freeze. Anyway, thanks for a great recipe!

    NANA MY FATHER THAT ADOPTED ME SAVED ME AT THE AGE OF TWO. HE ADORED ME AND SO DID MY MUM. I WAS ADOPTED AT THE AGE OF TWO. THE CHEF MIXER IS SWEET KIND GENTLEMAN. HUMBLE AND MY DAD IS IN HEAVEN.

    I remember my mother using a strand of uncooked spaghetti to check her cakes or a sharp thin paring knife. My husband loves frosting but he's fine with a glaze as long as its thick enough and covers the whole cake lol He expects a thick glaze on an apple tart or sugar cookies, too. I suspect that's why we've been married 45 yrs. He may have married me for my good looks lol but we all know that has a short life span. :o)

    I would sift flour and add some nutmeg but I like that it only has coconut and no rasins

      The coconut adds a nice touch and really does not seem like a coconut cake. Even friends who are not particularly fond of coconut like the cake.But of course you could leave it out. It would just make a smaller cake.

      Hi,
      You can certainly use a hand mixer to begin with but just stir in the carrot mixture. It would be too tough for the hand mixer and could burn out the motor,A hand mixer is good for many things but not heavy doughs. Nana

      The simple answer to this is NO.They are completely different in their structure. Banana cakes and breads are made with mashed ,very ripe bananas.I have a recipe on utube for a chocolate banana cake which is very good.

      I'm sorry-I'm not knowledgeable on substitutions..I do believe in good ingredients and moderation. If a substitution results in a delicious product-that's fine. But if it's just OK I'd rather do without'

    I don't like any frosting on my carrot cake, a well made cake doesn't need it. I find that icing a lot of the time is to make up for a dry cake. I have only made buttercream twice, and both times it took away from the flavour of my bakes. I find a fully frosted carrot cake just tastes like frosting with an aftertaste of carrot cake.
