Those perilla leaves look like what I used to feed my silkworms. When my daughter was a little we used to have silkworms. They were so much fun those look mulberry leaves

I like bulgogi, a little rice, yellow pickled radish which is my favorite, kojujang and garlic wrapped in perillo leaves but I never had it with chicken either but I have to say everything looks absolutely delicious!😍👌
Depending on how much rice you put per wrap next time, you might still want a good amount of pickled veg to add flavor... since the rice might be plain. But having watched your videos for a few years, I can see you getting by w less veggies lol. Me, personally, I would be going to town on the side dishes lol. Love Korean style veg. I think Ben has been in Korea too long. He's apparently forgotten an American tradition: leftovers! I can think of any number of nice lunch ideas he could use the sides for (garnishes FTW).
Korea is actually super in tune with leftovers.. not just an American thing! MOST recipes utilize leftovers. All Korean dishes are served with sides that traditionally are leftovers. There’s even a dish called army based stew which incorporates leftovers :)

Even in America the fast food lettuce wraps don't look fresh like that. I'm sure there are some places that do a good job but that looks delicious. I've always wanted to try like rice and meat in a banana leaf.
It's actually probably most common in Korea and they have a name for it, it's called a 'Ssam'. If you can find or visit any KBBQ place they'll always give you the leaves to wrap your meat in.

The Food Waste is most likely used for compost. Even things like meat, which at home should NOT be put in compost, can in the large-scale industry be safely recycled. A win-win situation where our uneaten food ends up being a meal for the plants that give us life!
