Love pasta salads, and these did not disappoint.
Just a tip when you have to cook multiple pastas. Get a pasta pot. It has a big insert, all you do is lift it up, and the water will drain out. Put the insert back in after you removed the pasta and you are set to make your next batch of pasta. You might have to refill a bit of water each time. But it would be much faster.
Or use an electric kettle to boil you water.
I often see US youtubers boiling huge pots of water on the stove without lid and wonder how long it takes to boil that pot of water😂

I have similar insert for steaming for my instapot (I know Becky has one too) and cook my pasta in it under pressure - minutes on package divided by 2, round up for pasta salad, round down for ordinary pasta if odd number
I make pasta salad ALL the time. A trick I learned over the years is cook the pasta till very al dente (think white line in pasta when cut in half) and then rinse under cold water and let drain fully. It will stop the cooking process of the pasta, prevent mushy and overcooked pasta in the salad, and reduce the amount of extra liquid into your salad. It also saves your ingredients from par-cooking with the hot pasta. The mayo/sour cream will be absorbed into the pasta and finish the pasta so it's amazing!

I always run cold water over my pasta when makng pasta salad to cool it completely. . It always surprises me when I see someone making the salad with steaming noodles.
And I would think the hot pasta would melt the mozzarella cheese but it didn't seem to for Becky,

I was just coming here to say that running the pasta under cold water really improves the outcome
yes I always rinse with cold water, If I put hot pasta into a cream base like mayo or yogurt it separates and the mayo does funky things...like put too hot potatoes in southern style mustard/mayo potato salad....the pasta must be cool or cold not steaming...
I just really appreciate you talk through each step and chat a bit here and there. I don’t like videos that have loud music every other second. Watching your videos is just so relaxing (and makes me want to eat😂)
I always drain and run cold water over my pasta after its done cooking so it will stop the cooking process. Plus it will be cold before I add it to my mix. All these salads look and sound delicious 😋.

Becky, I'm sure you would love to grow your own peppercorns. I took seeds right from my cabinet. Yellow peppercorns. They had the prettiest yellow flowers, and the seed pods are sorta like a green bean pod with the little peppercorn seeds inside.

I'm so glad you made the salads with different pastas and all four looked delicious. With 108 degrees on Thursday I will definitely make it with grilled chicken to keep it light and refreshing.
Mmmm, those pasta salads all look absolutely divine! What a great thing to bring to the beach. Cool, filling, nutritious and packed with flavor. I haven't made a pasta salad in ages, but you've got us salivating. It's time! 😄
Also, you actually CAN grow your own limes and lemons here (I'm in Portland), at least in summer. We have a Meyer lemon tree and a Bearss lime tree in pots. Both produce lots of fruit and look fantastic out in the garden laden with their treasures. The blossoms smell divine in spring, and the fruits can be left on the trees for quite a long time without going bad, although the limes will start to lighten to almost yellow and continue to get sweeter (less tart) over time. We put them on platforms with castors and roll them into the greenhouse over the winter, but the friends of ours who inspired us to get them put theirs into their (relatively dark) garage in winter and they do just fine as well. If you had a nice south facing window you could actually bring them inside and they'll continue producing fruit basically year round! But in our case they're in the greenhouse and kind of go dormant in the cool/cold winters here. But come spring, when they start to bloom as the days get longer and it's consistently warm enough, they pick right up and go back out into the garden.
There's only the two of us and despite both trees being under 4' tall at this point, they produce far more fruit than we can use in the summer. So at the end of the season or when fruits need to be harvested and we don't need one, we juice them into ice cube trays and freeze them for use as needed in our citrus off season. We also have a kafir lime tree and keep leaves and some of the limes frozen as well for Thai recipes, but of course they have a different flavor to the limes we're all used to here.

Howdy. This may have not been on the recipe but Elote is usually also grilled. If you make this again, I suggest adding flavor to the corn by throwing it in a cast iron with some butter to brown it up a bit.

One thing that may help is to rinse the noodles with cold water after cooking. It cools them Off and gets rid of some of the starch. If you use the spray nozzle on your kitchen faucet it will work better.

Except the first “i” is also an ee sound. Dee-tah-lee-nee. Italian vowels don’t change based on where they’re placed like in English.
My grandmother made caprese salad every Christmas except she used orecchiette, homemade mozzarella, Roma tomato, basil, dill, and balsamic dressing. Always cool your pasta completely so that it soak up the dressing and become mushy. My grandmother used to put 2 cups of ice into the pasta to cool it rapidly.

I LOVE salads of all kinds! My summer favorite is either a greek salad with feta cheese, cucumber, onion and tomato or a watermelon salad which has watermelon, feta cheese, red onion and cucumber if you want. It hydrates you well and is super tasty with some grilled chicken on the side. Growing up, we often had pasta salad but we would us a vinegarette as a dressing? I guess everyone does it differently.

i used to bring a pasta salad to work potlucks all the time that had a caesar dressing base and people went crazy for it! when i left my job they even asked me to share the recipe. something about it is just so delicious and way better than normal mayo or italian dressing in pasta salad

you need 1 lb rotini cooked, drained and cooled
2 bell peppers diced
1/2 red onion diced
1 small package cherry tomatoes halved
a handful of whatever fresh herbs you like chopped like parsley, basil, or even cilantro
3/4 cup cucumbers diced or sweet peas
1 cup grated parmesan
dressing is 1 cup caesar, 1 cup italian dressing, and 1/2 cup mayo
it seems like a lot of dressing but the pasta will absorb so much. enjoy!!
Try using the dull side of your knife to scoop ingredients off the cutting board and see if your knife holds it's keen edge better.

I was thinking about your family not liking nuts... Nuts are usually added for a crunch factor. What about substituting toasted croutons? You'd have to add them at the last minute, just like you could add the Romain lettuce right before serving. It would add that crunch factor you're leaving out. The croutons could even be seasoned (with similar seasonings found in the dressing) for extra flavors. 💕🌞🌵😷

TIP: You can ruin your salad mixing in hot, wet pasta. Cook up the day before thus having a full day to drain spread out on sheet pan lined with t-towel and cover eith more towels to absorb moisture. Using hot, not well drained pasta can turn your salad to mushy/watery and the heat can cook something that shouldn't be
I cool my pasta by running it under cold water and letting it drain really well, works perfectly every time
also makes the mayo or yogurt separate!
I was also surprised she added such hot pasta. I l’m not worried about it cooking something, but I find it really absorbs the dressing.
I've been known to stick my sheet pan in the freezer to get the pasta cool faster, just go and stir it every 5 to 10 min. to cool it off.

One of my favorite summer pasta salads is shell pasta, parmesan pesto, fresh cherry tomatoes, and sauteed mushrooms + spinach. Absolutely delicious!

I never make pasta salads because there are several mayo-haters in my family. Although they mostly also don't care for sour cream I think I could get away with Greek yogurt or even cottage cheese. Thanks for helping me increase my options.
Yummy, I love pasta salad, I love using Italian dressing and throwing in the tri color rotini, thin sliced red onion, sliced olives, cherry tomatoes, a pint of my canned chicken or turkey drained and the shredded parmesan cheese, you can do this with ranch dressing also. In place of mayo you can use greek yogurt also, I love the sour cream yogurt mixture its really good. ooohhh that cilantro dressing looks so good I will have to try that one. I do that with recipes also, I used to print out 3-4 recipes and take things from each of them that I liked to make my own version and I still do that.
I've heard you say different things about foods your parents didn't eat and it is so interesting because I'm from the South and everything has mayo in it if it's a salad. I think y'all are just way healthier. The Mexican street corn one looks delish but I hate cilantro. I've made it before without the cilantro and it's still really good. I would love to see an update on your little one!!

I first saw the trick of using two lids to slice cherry tomatoes was on Racheal Ray's shows.
Those look really good!! For us, I know more jalepenos would have gone in, and all of the sundried tomatoes in the other salad. Pasta salad just says Summer to me!
I always add anchovies paste to my home made Caesar dressing. I would also wait to add the bacon to the salad, it is going to go soft in the mixture, I would add it at serving time.
I think Worchestershire sauce contains anchovies.
@@JD-qf6zl it does, but the paste is more concentrate and you can a better taste using the paste. You can get anywhere. I kept a tube of it in my fridge.

I just made the Mexican corn pasta sald. I doubled Mexican sour cream but didn't add mayo, grilled the corn on the cob with butter, and added leftover chicken to it. I tried a few bites and it tastes really good!!

Oh my gosh ! Those all look delicious! For some reason, my brain really wanted the addition of cucumber in the orzo salad.
After draining the pasta for the salad it helps to run it under cold water to stop the cooking and to have a head start at cooling down the completed salad.

I love a good pasta salad and every summer I just crave it. I do substitute salt with grated parm cheese....adds the salty taste and the additional cheese is always good.
Worcestershire sauce is actually just pronounced WUSTER SHEER sauce. Its only Americans who say the full name as its written. Always makes me smile when I hear others try to get their tongues around it. The recipes look and sound amazing. I will definitely try a couple of them.

I made the Caesar pasta salad with dressing in recipe and bowtie pasta, the optional add ins were roasted red pepper, green onion, tomato, peas and spinach was added with each serving. My goodness this was a great recipe, appreciate you sharing Becky!

I replace all sour cream with Greek yogurt. Now. Did you add fresh lime? You did.The second salad looks amazing. Nice knife skills first time watcher but big cook. These sound great.

Hi Becky, I’m just trying to remind you to please watch you tube video of Julia Child with guest Lauren Groveman for her New York bagel recipe. She uses malt Barley syrup or you can use diastatic malt granules to really improve your texture and taste. I made them and they are the same as the store. Amazing. Time consuming and bit, but amazing. Also thanks for these delicious salad recipes.

We have a local oil and vinegar tasting room that has a 17 year aged balsamic that is sooooo good! It is exactly what you described. Almost a reduction but it isn’t at all! It is so sweet and flavorful. A must in our house!
My moms rule on any pasta salad was never put warm pasta in , chill first so you don’t spoil the dairy, or egg or delicate herbs

If you ever look for an exciting/unique dressing for pasta salad: I use equal parts ajvar and Joghurt (and then I season to taste). It's so good
For the Mexican Street Corn Pasta Salad... after draining your corn, pop it in a skillet with a little garlic olive oil and fry it so you have some char on the kernels. It really adds to the flavor. I also add a little bit of small diced red onion. You can easily make it a full meal by adding some diced cooked chicken (that's what we do). Yum
