How to Make Pound Cakes in the 18th Century |1 Pound of Sugar|😲

  • Pound cakes originated in the early 18th century, getting their name from the fact that originally they contained a pound of flour, a pound of sugar, eggs & butter. That's one heavy cake! Let's try them out and see if they're any good.

    I recomend that you try these at home! ^_^ You will either love or hate them but either way this is a fantastic way to experience how baked goods have evolved over the centuries. Please watch till the end to see an image of the original recipe (or reciepts as they used to be called). Below you will find a recipe translated from the original with more modern directions.     Pound Cakes, 1796
    2 cups of sugar
    1 pound of butter
    3 and 1/3 cups of flour
    0.5 cups of rose water
    9 eggs
    Spices to your taste (caraway seeds or cinnamon + nutmeg are period correct options)

    Directions: Cream together the butter, sugar and rose water in a large bowl. In a separate bowl whisk up 9 whole eggs until they are pillowy, thick and foamy. This can take anywhere from 30-60 minutes of vigorous whisking. Once done pour these eggs into your butter mixture. Now slowly add in your flour a little bit at a time while carefully folding so as to not disturb the egg bubbles too much. Bake on paper or in a mold as thin as possible as they should be like cookies. If cooking in a mold please put a sheet beneath them in your oven as the butter is likely to bubble over. Do not grease the pan. Bake at 350 degrees for 15-20 minutes.

      It's a pound cake because it uses a pound of each ingredient. It's one of the first things I ever learned how to bake because it's almost foolproof.

    Wow this was the most revolutionary recipe I've come across in your vlog. I never knew the origins of the pound cake or that it was originally in cookie form. And that whisking of the eggs!!!! First , had no idea you could whisk whole eggs to that consistency and certainly not with a stick whisk.....epic❤.

    I already baked the pound cakes since you made them in another video alongside with a honeycake and some other kind of cookies. BTW The honeycake was something I made, too and it was gorgeous. Here in Germany we have honeycakes in the stores but they are far too sweet. This was balanced well. To the cookies: I tried them and they turned into one big cookie while baking.
    I should have put the dough in the fridge for a while before baking. Or better I should have baked them in a Muffinbackingtray. Otherwise they were amazing. At the beginning I was sceptical towards the carawayseeds because I only use them as a seasoning for peeled potatoes. But the cookies turned out so good. I love to discover new things to eat. Most historical dishes seem fancy nowadays. People were eager to try new things and to experiment.
    Pro tip:
    Add some bitteralmondoil. The combination of carawayseeds and almondoil is amazing. I have a different poundcake recipe in the book "Dinner with Mr. Darcy" by Pen Vogler. She uses a recipe from Martha Lloyd and the cookies are baked as a cake.
    Apparently the cake was also called "sponge cake" by Jane Austen in a letter to her sister Cassandra.

    I can’t even imagine how long it took to get the eggs that creamy texture. They looked so yummy when you were done . Another recipe I need to try. Although I’ll probably substitute the rose water. Nothing beats the way you bring history to life 👏🏼👏🏼👏🏼

    Great video! whipping eggs made me realize how lucky I am to live during the era of electricity and a Kitchen Aid mixer. (5-10 minutes whipping with a KitchenAid and whisk attachment). I appreciate all the hard work and people involved that goes into making this video. Thank you!
