  • Here's my twist on the popular Low Carb Soul Bread Recipe
    Recipe for Modified Soul Bread with Oat Fiber
    12 ounces of cream cheese, softened in the microwave
    4 eggs
    ¼ cup heavy cream
    ¼ cup melted butter
    ¼ cup bacon fat melted
    2 tablespoons apple cider vinegar
    Mix all ingredients well and set aside. Mix dry ingredients
    1 ¼ cup whey protein isolate (Isopure or Hoosier is recommended)
    ½ cup oat fiber
    ¼ tsp salt
    1 package yeast (for taste)
    ¼ tsp baking soda
    1 tsp xanthan gum
    2 ½ tsp baking powder
    ¼ tsp cream of tartar
    Mix all dry ingredients. Use a sieve or sifter to sift dry ingredients into the wet ingredients. Stir in in lightly. Do not overmix. Add 4 drops of liquid sweetener if you’d like.
    Preheat oven to 325 degrees. Pour dough into a 9” by 5” bread pan greased liberaly. Back for 45 minutes until golden brown. A toothpick can help test for doneness in the middle. Don’t under bake or it will sink as it cools.

    Kristie. I’ve never been able to watch cooking shows. The fiddling around, the over exactness, worse, the kind of focus they had on the food!

    I made this bread today for 1st time and made slight changes. All I can say is YUMMY! I only omitted the cream of tarter (i didn't have) & the sweetener, and added cheddar cheese - 1 cup. I don't believe any of my changes really affected the bread structure. I had no idea that the LC bread would rise that high! I like the bacon fat you added for taste. Thank you Kristie you're name is popular around my house. This is going to be a favorite and I can see that if I add sweetener it can become a sweet bread. One day in the future … I will do that. On the 4th we made Bar-B-q like yours on the grill. I had never done that before, I am a visual person and after seeing David doing that video. I knew how we were going to do that and it worked great. Made your sauce too! Now I don't crave Dickeys, usually once a week we go for a pork sandwich - not this week! I'm satisfied - and that is what this way of eating does as you continue to say.

    OMG.....I have made soul bread just once before and it was like a sponge. I got the right protein powder and switched to a different brand of oat fiber....IT WAS THE BEST EVER. Thank you for the recipe it was great, I did it just like you did with a smaller loaf of cinnamon and sugar. THANK YOU!!

      lol!!! so glad you liked it!! be sure you're using low carb brown sugar like that made by Sukrin. several folks have misunderstood and thought I was using real brown sugar! Never!!!!

    Just made this tonight. The only thing I changed is that I used refined coconut oil instead of bacon grease and threw in some chia & poppyseeds. This is hands down the BEST low-carb bread I've ever made!!! I can't wait to try it as a sweet loaf sometime. It would also be awesome with shredded cheddar, garlic, and parsley and I bet it would taste a lot like Red Lobster Biscuits. This base has so many possibilities! I can't wait to experiment with this recipe. Thanks so much!!!!!!!!!!!! ♥♥♥

I tried going LCHF 4 yrs ago but couldn't keep at it as I wasn't a good cook and there weren't as many resources then. Seems like the landscape has changed quite a bit now.     It’s the best low carb bread recipe out there, I just made this, wow fantastic, I use it for my lunch sandwich everyday. It did rise perfectly, I used butter instead of bacon fat, next time I will use the bacon fat. I also made a mini cinnamon loaf, sprinkled cinnamon and granulated sweetener on top, excellent. Thanks for the video and recipe. Keto forever!!

    Oh my goodness this bread is wonderful. I have been making low carb breads trying to find one that we all liked. The rise in the bread was amazing and the texture felt like bread in my mouth. I didn’t wait for it to cool and slathered butter on it. A real keeper! Thanks for sharing.

    Made this today...sort of. I added a bit more baking soda. When the batter was mixed I realized it reminded me of my old pancake recipe (consistency ) that is . So I made a couple pancakes. It works. Also made the cinnamon muffins instead of a little loaf. 1/2 the batter for a loaf of bread for grilled cheese sandwiches and soup later this week and the other half for muffins. I will use this recipe for pancakes minus the yeast next time. Thank you!!!!

    Hi Kristie, love your videos and wanted to share some of our low carb bread tweak successes...nutritional yeast flakes add yeast flavor and added nutrition to all low carb bread recipes and can also be added to other foods for a cheesy flavor. A bit of coconut flour (about 1 TBSP) added to eggy low carb recipes makes them much "breadier"and somehow masks the egg taste...especially in oopsie/cloud rolls :). Going to try the oat fiber next!

    This looks amazing. I never been much of a Baker but recently have started to really enjoy the challenge of baking Keto recipe's with out using traditional baking methods. It is a lot of fun to experiment in the kitchen and come up with new ideas.

    I have been eating high fat and low carb/protein for three months. I have now lost 26 pounds and gone off BP meds.
    My daughter just sent me to your videos this morning, and I am anxious to see what you have to offer! I have a gluten allergy, so I'm also watching for any stray wheats.
    I will try this recipe when I feel safe enough to not suddenly crave sweets and breads again! It looks delicious! I'll be bopping around to watch other videos to see what I can safely glean! Thanks for doing this.

    Sub'd psyllium for oat fiber, lard for bacon fat, guar gum for xanthan & used a vanilla whey I had on hand. Beat by hand with my danish dough wisk. Baked 50". Came out wonderful!

    I just made this - I forgot the xanthan gum, and only had the whey concentrate, but it still turned out nicely. I'm ordering the other whey. I love that you added oat fiber -- I am a big believer in using it when possible. In a different recipe (gingerbread muffin), I sub 1/2 the almond flour with oat fiber. I add extra eggs and liquid (to the oat fiber, letting it absorb the liquid) then add that to the dry ingredients before I add it all to the wet. It reduces any grainy feel that oat fiber can sometimes bring. I may try that with this recipe! Thanks for your hard work!

    I just made your Modified Soul Bread with oat fiber. It is way delicious!! I made four small loaves: 1) Plain; 2) Sweet Cinnamon; 3) Onion Flavored; and 4) Parmesan/Romano Cheese Flavored. They all turned out awesome. This is not really bread-like texture, it seems more like cornbread texture in that it holds together well but is a bit more "crumbly" than regular bread. So next time I'm going to make a loaf with buttered popcorn flavoring in it to see how close I can get to cornbread without cornmeal. :-) Oh, I did not have whey protein isolate so I just used whey protein, unflavored. It still turned out awesome! I think it would be delicious with some jalapeno peppers and bacon in it as well. Lots of possibilities with the base recipe!

      JustaFan I thought it tasted like cornmeal too! Glad I'm not the only one. Still good. I didn't use Isopure, I used cabot, maybe thats why mine was like that.

      @@bleh-bleh2956 coconut flour, if u like the taste of it. I like coconut flavor normally but I don't like the taste of coconut flour at all. But it acts just like the oat fiber. Kristie has a video on substitutions in low carb eating.

    I don't know where my brain was when I made this Soul Bread! I used all butter bc I didn't have bacon grease.. I forgot to add the heavy cream and the cream of tartar... What a forgiving recipe. After baking.... it was sweet... In small print on my whey protein was 'vanilla flavor'... I've used the 'sweet bread' as a pound cake with cream and strawberries and raspberries on top. I'll be making it again.. Hoping I can read the recipe correctly next time. Like I said it is very forgiving!! Love it! I actually think it may be my go-to bread from now on. Thank You!!

    I love oat fiber! I adapted my favorite pumpkin bread recipe to low carb (mix of almond flour, oat fiber and ground flax) and made muffins.
    They. Were. So. Good!

    Love this. Been experimenting with making keto breads. I use very few ingredients. Coconut flour, flax meal, chia seeds, bacon fat, butter, sour cream, heavy cream, maple extract, 6 eggs, whatever seasoning I like. It's more like a flatbread but I will try adding baking powder this time. Binding agents are so important in keto breads in my experience or they crumble away on me. Flax meal fixed that issue for me considerably!

      Binding agents are so important! I don't use flax because it can be a hormone disruptor, but I do love using pork rinds as they have a gelatinous texture when used in baked goods.

      Hi Diane. Thanks for asking and yes, we made it using this recipe: alldayidreamaboutfood.com/2016/11/low-carb-sausage-bread-stuffing.html. It was very good and tastes like a traditional stuffing. The bread is much denser than the usual type and so the stuffing had more body than stuffing made with regular bread. Because it had sausage in it, we were able to use the leftovers as a main dish. Very good! I have also made grilled cheese and BLTs out of this bread an highly recommend it. It rises well and really does act like true bread! My next plan is to make a "sweet" version of it.

    Tried making this today. Only thing I omitted is the yeast I used avacado oil for the olive oil. It is pretty darn good as low carb bread goes. I will definitely make it again with bacon fat (none of that right now.) Think bacon would give it a really nice flavor. Thanks for your videos. Not sure this way of eating is right for me but after five years on low carb and a weight stall I'm giving it a try.

I appreciate people using their cooking knowledge and imagination to create new variations and mods on the original. If it makes it lighter or have a texture better to their liking, I'm all for it!       Ten la nu emet Highfalutin Low Carb has made some impressive looking corn bread. I haven't tried his version yet but plan to when I get the ingredients together. He has a corn bread battle video and following that, his own version of corn bread in a video for southern style dressing. I can't wait to try em. Good luck to you!

    I had a similar experience with the original Soul Bread recipe in that it wasn't necessarily "bad" but the texture was just...a bit odd. So I decided to order a bag of oat fiber and I'm about to give your modified version a try. Wish me luck!

    You saying you weren't eating the heel made me think of stuffing, because we always saved the heels of bread for stuffing! Will have to try some with some herb seasoning.

    I made this tonight, got a really nice rise. I did not taste any yeast flavor. Also, I whipped up the wet ingredients really well in my Kitchen Aid mixer but still it had a few cream cheese pieces in the bread that were evidently not mixed well. overall pretty good. I haven't tried the original soul bread, but I will next. Thank you for sharing your video and tweaks.

    This bread is incredible. I adjusted the baking soda and powder since I live at 5,000 ft above sea level, used THM whey as it is what I had on hand, and baked in an 8.5"x4.5" pan as it is my favorite pan. The bread rose beautifully without falling, had a beautiful texture, not too dry, and the flavor was outstanding for a low carb bread quick bread. Some good additions would be bacon, cheese, or green chile. It may even be good with Parmesan and rosemary and/or thyme sprinkled on top. The true test...the Hubs like it! Thank you for sharing your recipe. It's a keeper.

    I actually used 1/4 cup oat fiber with 1/4 cup psyllium husk to make it slightly more dense. It holds together great for using to make a sandwich.

    I have used Body Fortress Whey Protein Isolate in Vanilla. It is available at Walmart. I have also used Unjury brand plain unflavored whey protein available on their website. I had a gastric bypass and Unjury was recommended by my doctor. Using the vanilla protein powder I made a sweet loaf sprinkling Sukrin Gold brown sugar substitute on top, and with the Unjury plain i made a regular loaf style bread. Both came out fantastic. Had no issues and i did not use the preferred protein powders listed here.

    To avoid over mixing just whip the egg whites separately from the yolks and you can mix it all together and have an even lighter mixture (similar to making waffles as opposed to pancakes)

    Hope you stayed safe in the weather today! Thanks for the recipes. I did your fat bombs (with the pumpkin pie extract from Wal-Mart) and it was delicious! I also did the Crack Slaw and it was sooo good. I didn't have ground beef at home, but I had some carne asada beef so I substituted for that...it was awesome! That is definitely something I will make often now.

    Kristi, I want to try this, and love all your cooking. You cook like I do, and have helped me so much. We have nut allergies, and whey protein allergy. What would you suggest (and portion) for the subt of the whey? I am thinking maybe some tigernut flour, pea protein and more egg whites? Just not sure if a little of all or one or the other and how much. I have been trying several recipes with the tigernut (not a nut) but, you know it still is a tiny bit high in carbs. Can’t have almond, can’t have coconut, so really trying to find substitutes / proportions for those also. Thanks for any advice!

      Oat fiber is completely insoluble. You deduct those carbs from total. Basically, they don't count.

    Love the idea of putting yeast in for flavor. I saw another video where she did that and she specified using the quick active yeast. Just wondered which you used, regular or quick.

    I was finally able to make this today, turned out good but I accidentally only used 8 oz of cream cheese and I did not use the liquid sweetener as I was using vanilla whey protein. It is very good but not quite sure on it. I have to see if it is a bit firmer when it cools off. I did have some with it very warm still. Butter needs to be softer to spread on. I am going to try it with the isopure, I am assuming you used the unflavored. Thanks for the recipe!!

    So, if the yeast is only used for taste, can you use Nutritional Yeast Flakes instead or does it need to be the brewer's yeast that rises?

    Hi Kristie, not sure how often you check these comments...I plan on making this recipe tonight, however the one thing I don't have on hand is oat flour...would soy flour do in a pinch? Anyone else make this and subbed in something else. I really like the idea of adding the yeast in for flavor...we forget how that it can be just as important for flavor as it is for function!
