I had a situation with my kefir, after I would let it sit for 24 hours it would be on the top sort of cottage cheese looking, and the very very top would be rather dry looking. And the bottom of the court jar would be the whey. I would mix it up and I could use it. So what I started doing is letting it sit for only 20 hours, and it comes out very nicely. My question is this by cutting it down by four hours am I losing any probiotics, or the strength of them? Also, am I losing any of the vitamins by doing this? I hope you can answer my question because I’m very very concerned about it. Thank you in advance. I’m having same issue and was wondering the same. Some days at almost 12 hours I’m starting to get separation. It taste sour so I’m assuming it’s fermented and has all the probiotics. I did find another video on TH-cam where he talked about if you had your kefir over ferment a little and it gets really thick on top and the grains get really thickly coated that they will continue to ferment really fast because they are heavily coated and something about the yeast. He suggested rinsing them really well with some milk or filtered water but never tap. He also said when it ferments faster the flavor can be a strong more sour flavor.
Should i not wash my jars between batches?

I don't do recipes much because I just use what we have on hand. A good general recipe is a quart of kefir, a cup of berries, and 1/4 cup of maple syrup.
My kefir grains are not very big or translucent, am I doing something wrong? Just subscribed 🤗
Sometimes they haven't been well taken care of prior to you getting them and they just aren't in the greatest shape. However, if you feed them a quality milk daily, they will soon be nice and plump and happy! Keep up the good work - it's worth it!

I was a flight attendant for Alaska airlines for eight years and lived in Anchorage for three of those years. So excited to have subscribe to your channel.
Some people say small grains make better and quicker kefir!

Is milk kefir lactose free? Also do you tighten the lid on the jar with the new kefir or does it need to be loose?
Great questions! I believe there is still some lactose although it is minimal in milk kefir - because the grains eat the sugars. :) I tighten it and it sits on the counter. I change it out daily. :) Hope that helps!

Can you leave your kefir grains in the fridge until you are ready to use them?
Yes you can. It will still ferment but it slows down the process.
Hi 👋 can I know how much grains if I want to make 1 ltr of fresh milk? TQ
Some say 1 tablespoon is enough for 1 liter. I put 1 tbsp in 300 ml because the weather is getting cooler, in hotter weather I can add more milk. Temp and milk/kefir grains ratio are a factor to consider.
Are you using ultra pasteurized milk?
I found it just didn’t work unless I use the vat pasteurized milk or fresh milk.
We don't drink ultra pasteurized milk so I wouldn't have a clue how that works. For the kefir I sell, I use the Alaska Range Dairy milk which is vat pasteurized (minimally) but for our own, we use raw from our raw milk shares.
