These are mostly folk songs, hence in simpler scales. Indian classical music is another thing. The two sided drum is the original drum of India from 1000s of yrs. tabla is only 800 years old and used more for classical music.
the skin on the two sided drum called dholak are held taut by ropes running on the surface of the drum, and these can be tightened by rings strategically knotted in. In the tabla, the right side has wooden pegs that can be hammered down to fine tune it.
Since the hosts have wondered what rhythm is used in Tabla, as in time cycles, let me elaborate. The most basic scale in India is 8 beats. Some light songs also go on 6 beats. But, classical musicians love a 16 beat rhythm that goes: dha dhin dhin na, dha dhin dhin na, dha TIN TIN na, TA dhin dhin na. Then, the next most popular is 7 beats and then 10 beats, and then 14 beats. Zakir Hussain can also play 9 beat, 15 1/2, 19 etc. :o
It's a stereotype that Indian Food is spicey. Like Indian music Indian Food is also very diverse. You will get all sort of flavours and taste not just spicey. You can try foods like Butter Chicken with Naan, Pulao, Malai Kofta, Plain Dosa, Dhokla, Dahi puri, Samosa, Gulab Jamun etc.

The instrument that you were calling tabla is actually Dholak(or Naal) which is older than tabla itself. Both these instruments are believed to be a different version of another older instrument called "Pakhawaj" which is also a two sided drum with low scale tone.
