- Ranch Chicken and Potato Foil Packs
8 small new potatoes, unpeeled, cut into wedges
6 boneless, skinless chicken thighs (about 20 oz.), cut in half
1/3 cup vegetable (your choice)
1 1/4 cup ranch dressing
4 slices precooked bacon, chopped
1/4 cup chopped green onions (4 medium)
1/2 teaspoon coarse ground black pepper
Heat gas or charcoal grill or pre-heat air fryer to 430 degrees or pre-heat oven to 430 degrees. Cut 4 (18x12-inch) sheets of heavy-duty (or nonstick) foil. If using heavy-duty foil, spray foil with cooking spray.
For each packet, place about 1 cup potato wedges, vegetable and 3 thigh halves onto center of foil sheet. Drizzle with scant 1/3 cup dressing. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
If using a grill, when heated, place foil packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. If using air fryer or oven place foil packets on baking sheet and place in the air fryer or oven. Cook 45 to 50 minutes or until juice of chicken is clear when center of thickest part is cut (180 degrees), and potatoes are tender.
Remove packets from grill, air fryer or oven; open carefully to allow steam to escape. Sprinkle each with bacon, onions and pepper.
Seasoned Burger and Potato Foil Packs
8 small new potatoes, unpeeled, quartered
1 teaspoon seasoned salt
1 teaspoon Italian seasoning
1 tablespoon olive or vegetable oil
4 frozen lean ground beef patties (about 1/4 lb each)
1 cup frozen cut green beans
4 tablespoon aioli
1 cup shredded cheese
Heat gas or charcoal grill or pre-heat air fryer to 435 degrees or pre-heat oven to 375 degrees. Cut 4 (18x12-inch) sheets of heavy-duty (or nonstick) foil. If using heavy-duty foil, spray foil with cooking spray.
In medium microwavable bowl, toss potatoes, 1/2 teaspoon of the seasoned salt, 1/2 teaspoon of the Italian seasoning and the oil to coat. Microwave on High 4 minutes or just until potatoes are fork-tender.
Place 1 beef patty on each sheet of foil; sprinkle patties with remaining 1/2 teaspoon seasoned salt and 1/2 teaspoon Italian seasoning. On each patty add 1 tablespoon aioli, 1/2 cup cheese, 1/4 cup green beans. Top each evenly with potatoes. Wrap each packet securely using double-fold seals, allowing for heat expansion.
If using a grill, when heated, place foil packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. If using air fryer or oven place foil packets on baking sheet and place in the air fryer or oven. Cook 30 to 40 minutes, turning packets over once halfway through cooking, until meat thermometer inserted in center of patties reads 160 degrees and potatoes are tender.
Remove packets from grill, air fryer or oven; open carefully to allow steam to escape.
Smoky Potato Foil Packs
1 bag (28 oz.) frozen potatoes O’Brien with onions and peppers
1 package (16 oz.) miniature smoked Polish sausages
3/4 cup ranch dressing
2 tablespoon BBQ sauce
1 cup shredded Cheddar and American cheese blend (4 oz.)
2 tablespoons chopped chives or green onions
Heat gas or charcoal grill or pre-heat air fryer to 375 degrees or pre-heat oven to 375 degrees. Cut 4 (18x12-inch) sheets of heavy-duty (or nonstick) foil. If using heavy-duty foil, spray foil with cooking spray.
In large bowl, gently mix potatoes, sausages, BBQ sauce and dressing. Spoon mixture evenly onto foil sheets. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
If using a grill, when heated, place foil packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. If using air fryer or oven place foil packets on baking sheet and place in the air fryer or oven. Cook 30 to 35 minutes, rotating and turning packets over several times, until potatoes are tender.
Remove packets from grill, air fryer or oven; open carefully to allow steam to escape. Sprinkle each
with cheese and chives. Close packets; let stand until cheese is melted.
