As someone who never played this game as a kid, I think you have nostalgia goggles on. MK64 tracks are really pretty basic, especially compared to every MK game made after. MK64 was groundbreaking no doubt, but it definitely shows its age and the updated tracks in MK8 really bring the environments to life like the old N64 never could.

I think there even is a comlete playlist of the restored MK64 soundtrack. People have searched down all the CD samples used in composing the songs and then used them to recreate the purest version of the soundtrack at studio quality .
The models for the charcters and items are pre-rendered sprites witch is why they look so good (it was like that in the OG game as well). Also until we get a proper PC port the models will have to stay kinda blocky cuz N64 emulators crash when a model exceeds the max polly count for a N64 model.
