      I’m curious to know if this would work with baking powder(cause that’s what I usually have)

    I made these for my family tonight and my wife wouldn't stop eating them... I had issues when the pan was too crowded so I split them up into two batches and they came out incredible. Thanks man.

    Strong work. Have to try a cold water soak after slicing - makes them sweet by removing the starch. And use duck fat to roast for the most insane crunch. 👍🏼

      @Crow Dog actually, just rewatch the video. I would boil the potatoes, put spices and baking soda on, throw it into the fridge to cool for the starches to change into something sweet sweet, ehh, something else carbohydrate(don't know what actually is going on with the starches) like magic 🙌

      @@eliguzman8096 your grandmother baked roast potatoes by boiling in baking soda and tossing them up in a bowl? Most people usually just cut them up and put them in the oven, maybe the occasional pre boil, but what I've seen Kenji is the only person that cooked them this way.

    My Mum has been doing that for donkey years..tossing them directly in the calendar and only salt is needed in the water 😊 Crispy outside and soft inside !! Amazing!!!

    Extra tips
    - use hot goose fat instead of olive oil to roast
    - when you put the potatoes in the tray, use a potato masher to lightly squash the potatoes down. This increases surface area of the fry to make them even crispier

    Only recommendation I can make to this one is leave the skins on they are so tasty and a lot of nutrients in them and doing it with this method makes them go super crispy love them good job

    If you add a big lump of butter to the oil in the roasting pan, it also helps brown the potatoes and makes the crispy bits tastier.

    I have a similar family method:
    Do what you do, but without the baking sofa. Once they’re done, slather them in duck fat and chuck them into a pasta strainer bowl thing. Throw them around till they are pretty chuffed around the outside. Bake till golden.

    I think this would be an amazing recipe bit I would like to add my own. P.S, sorry if I offend @ThatDudeCanCook.
    1. Chop Potatoes all the same size. ( As many as you want)
    2. Put in a bowl and cover in about 2-3 tablespoons of oil. ( Depending on how many Potatoes.)
    3. Cover in 1 packet of ranch powder dressing. (In isle with gravy and stuff at Walmart. Also only 89 cents.)
    4. Spread evenly on pan and cook on 400 for about 1 hour.

    Minor change: After boiling, tossing, put them in an air fryer. It’s faster, easier, you don’t need to flip them, and they turn out AMAZING.
