  • This creamy mac couldn't be more classic. We're using elbow pasta in ours but feel free to use cavatappi, penne, whatever pasta you have in your pantry (but elbow and curvier pastas really are the BEST for mac).     I use sharp cheddar and gruyere in my recipe. The combo is truly delicious. I don't find gruyere "stinky" at all. More like earthy, buttery and sweet.

      I have always used gruyere for my Mac and cheese. It wasn’t stinky cheese. However, I once bought one from a particular store it was stinky and made the sauce taste smelly and weird taste.

      The only gruyere cheese I've bought is Trader Joe's shredded gruyere and swiss cheese and it wasn't stinky at all! It seemed like a very mild cheese to me, but ig it really depends on the store

    Let’s say I freeze this after assembly, how does it affect the cook time? Do I need to let it thaw or could I put it in the oven at 350 but increase the cook time to an hour?

    Gruyere is in stinky! I always asked for a wedge for Christmas and ate it all just like it was and cubes a cubed it up and I ate it! Every year I promised to a French onion soup and I only did it once because I ate the cheese before I could make the soup! Now I have no family or close friends to cook for and that's my passion seeing people smile when they eat my food. Which cheese is the stretchy one?

    I must b crazy. I use velveeta, dijon mustard (with the seeds), some cajun powder, salt, pepper, garlic powder, onion powder, milk, flour and bread,crumbs. I do use an additional stick of butter for the breadcrumbs though. Gotta make sure they brown up real nice. Oh, I also use small shells instead of elbows.

      Honestly, all of that sounds delicious except for the velveeta. Why use the god awful processed cheese when there are so many other REAL cheeses out there? Never use velveeta for anything

    I always add dry Colman mustard and the bottled Colman mustard, with black pepper, cayenne pepper, fresh ground nutmeg and salt. Adds a nice spicy and sweet kick to the cheese sauce. TOP off with panko and melty cheese like mozzarella or Gouda, or hard cheese like parmesan or percorino.

      Jean-Philippe Chassé for 8oz pasta. Cook the pasta as directed but less 2-3 minutes.
      2 Tbsp butter, 2Tbsp flour and 1.5 cups full fat milk for the roux,
      Add like 2 tsp mustard powder,2 tsp bottled mustard, 1 tsp black pepper, 1/2 tsp cayenne, 1/2 tsp ground nutmeg, 1/2 tsp salt into the roux. ( i usually just eyeball these amounts so adjust to your liking. Combine all the dried stuff in a bowl and eyeball the bottled mustard from the bottle)
      Add cheese, half melty cheese and half flavorful cheese, i usually use gouda or mozzarella and a sharp cheddar, you can choose your types of cheese, but half is the stretchy type and half full flavored. 1.5 cups total
      Mix panko and hard cheese like parm or perco in 1 to 1 ratio, just enough to cover the top, brown in 400f oven until top is slightly browned. Around 20 mins, maybe more or less depending on your oven. if no hard cheese, just use mozzarella or gouda.

      Replacing the butter with truffle butter is a bit risky-if you’re like TRUFFLES ARE LYFE (and they are an *amazing* addition!!!!) then go for it, but you might want to consider starting with truffle oil and see what you think first. 😊

    No need to turn on the oven to dry out bread. If you want breadcrumbs, just keep a couple of slices of bread aside and stick 'm in the oven as it cools from having used it for something else. Do that two or three times et, voila, dried bread.

      In her recipe, she combines 1/2 cup of parm with the cup of bread crumbs and some olive oil. I thought the combination came out great.. (I just made it for the first time for my family tonight..)

      Absolutely! If you're skipping the crumb topping, I'd suggest skipping the baking too. This mac is suuuper good straight out of the pot. If you do want to bake, there are a few brands that make gluten-free breadcrumbs.

    I never put Parmesan in my mac and cheese. Im Italian (I’m not acting better but I use Parm on my pasta with tomato sauce so when it comes to Mac and cheese, I try and use every other cheese) My fav ever is Vermont white cheddar, Gruyere and Colby jack, a teaspoon of grey poopon ❤️

      It's made of finely ground mustard seeds! Very classic mac seasoning. ;) Nutmeg sounds delicious too!

      The whole point of a roux is to cook the earthy/floury/powdery texture out of the flour and basically use it as a thickening agent. If it's still powdery, you didn't add enough butter to the roux.

      It sounds like either you didn't cook the roux (and the bechamel) enough or you didn't add enough butter/added too much flour. It's really great at making mac creamy, which is why I like it.

    2:40 No!!! Sorry but you CANNOT swap the gruyère for mozzarella! Gruyère has flavor while mozzarella is sooooo bland. Your mac n' cheese will have no flavor!

      Exactly! Mozzarella has no place in Mac n cheese, way too stringy! It should be rich & creamy not stringy, bland mac. Seasoning that pasta water also adds a lot of flavor too.

      I don't either. I also don't care for mustard in it.
      If I were to make this I'd ditch the breadcrumbs, and mustard, add some minced garlic into the sauce and swap black pepper for cayenne....And add some fresh parsley.
      The basic cheese sauce looks delicious though.

      There are easier ways but this method wasn't hard at all. I tried making it for the first time tonight.. It only took a little time out which I would have spent waiting on my pasta water to boil and cook the pasta anyway.. So by the time my pasta was ready, so was my sauce.

      Its to thinken the sauce, if you don't have it the mac n cheese would end up watery and wouldn't bind together

      Alyssa Worth no it wouldn’t, the starch from the pasta acts the same way. Look how dry the Mac and cheese was, it wasn’t creamy, if you just use the pasta it still binds the sauce go pasta.

    Why does every mac and cheese made by white people always has gruyere? Sometimes you can't afford that cheese! Whenever I make mac and cheese is because I'm on a budget and I need food that will last me a couple days...

      I dont know where to go with this lol. There are many substitutes for gruyere. And if your on that tight of a budget you should watch a " how to make boxed kraft mac and cheese". I get so irritated that race has to come up on everything even damn mac and cheese lol. Really.
