Its not only about awareness but will too. Our rich farmers ( who have the money to invest) can protest for months, stop trains , highways but just can't think or work beyond the comfort of MSP. They will grow the same same crop again and again which is making punjab a desert day by day and empting punjab coffers too ( electricity subsidy) but just can't make an effort to change or innovate, they are happy in send their kids to canada . Although small farmers really need awareness about this guidance too , it will really benefit them as they have most amount of will to improve.
It's not a rich farmer problem, it's an unorganised sector problem. There is no guarantee that you can sell them. They often become monopsonic markets.

In the Indian subcontinent, most mushrooms are poisonous, grow on cadavers or carry pathogens unlike the East Asian or European varieties. So we historically stayed away from fungi. Afaik only region this is not true are the Pahadi regions. If we want to build a market, do it for export and then later target the locals. For beginners, its prohibitively expensive to build an export market also. So it is an unpredictable niche market.

I have dates,dragons fruit , brocoli and other exotic fruits we face this problem
