In the North East of England, where I hail from, we have a version of chicken parma we call chicken parmo. It's chicken escalope topped with bechamel sauce with a smidge of nutmeg. Then top that with red Leicester cheese and pizza toppings (chillies, peppers and chorizo are my favourite) and in the oven until it's melted and delicious. It's very popular in Teesside and will change your life, especially after a few cheeky beers!
I just had dinner, but after watching this, I am a bit more than peckish. The Self Sufficient Me 2 is a brilliant idea! A big corn meal coated fried chicken thigh thumbs up!
I have issues with wheat , so haven't been able to do typical fried chicken, although I love it! Thanks so much for showing this beautifully coloured corn and how to use it for breading chicken. I always thought is was just good for popcorn. So glad you made a second channel! Much love from the southern mountains of BC Canada!
Good idea Mark, with the chicken breading. I have a variety of dent corn called, 'Painted Mountain Corn'. It's obviously found in mountains and that means it's more cold tolerant, so will still grow like your Aztec or Hopi color medley of dent corn you have.
Grow the corn, let it dry out for several weeks, wash, dry again. I guess I should wait a while before I buy my chicken thighs, lol :D Thanks, Mark. It looks delish
Hey mark, I don’t know if you know, but your coffee grinder cup can be twisted off, it’s heaps easier than trying to deal with the cord. We’ve got the same one, and it took us a while to work it out, so thought I’d share. Love the idea of the second channel too!
Thanks Mark! Great recipe. We put corn meal on fish with a couple of dashes of Cayenne which is a common dish. Your way is not uncommon either. It works great on Okra. Some mix it with wheat flour about 50/50 for a little texture on things like Zucchini and squash. Another good one Mark.
Hullo from Texas, Mark! Please look into nixitamalization. Aztec corn gave the Europeans a deadly disease I think called Malagre. The corn needed soaking in lime-water (calcium carbonate) before eating. Alton Brown did an episode about it. On cooking, try that coating on fish with a cocktail sauce of ketchup, horseradish and lemon. Also growing up we ate deep fried okra with cornmeal, but it wasn’t a thick bready coating. Hush Puppies . Johnny cakes and of course cornbread.

Talk about made from scratch? Your own chickens, your home grown corn meal and your own yard eggs. You'll need to work on mining your own salt and growing your own black pepper now mark and perhaps growing and making your own olive oil. Love the new channel. Keep the video flow coming Sir. I'm working on the pepper - got some seeding for the first time this year but the plant is still very small after 5 + years of growing due to still being a bit too cold here in winter but I'm working on it! Cheers :)
For your cornmeal, I highly recommend nixtamalization *_to increase the nutrition_* before grinding the meal. You can dry the kernels after nixtamalization to store them, then grind as needed. It's a _very simple and inexpensive_ process; there are many videos on TH-cam to show you how. That is a good one! Would it be possible to make popcorn out of it and would you have different colours? I am afraid that the colour is only in the skin of the kernels, but you never know?

I haven't tried popping it but it shouldn't because I doubt that it has a sealed air pocket as the corn dents/shrivels when dried whereas popping corn dries hard as is keeping the air pocket to pop under heat. Cheers :)
Good stuff mate, I reckon the only thing you're missing out on is hunting your own meat. That crumb but on rabbit loin and shallow fried would be bloody good going.
I live in country SA where it gets pretty dry and hot in summer, cold and wet in winter. Would we be able to grow this corn here and when should it be planted if we can.
These types of corn are great but you do have to be careful growing them around certain varieties of sweet corn. The wind can take the pollen to the sweet corn and ruin it. As you stated, the sweet corn is not as hardy and these Aztec varieties will always win out. So if you have a small garden you usually have to grow one or the other but not both. FWIW.
This type of content is great for a person like me who wants to grow a large garden but needs ideas on what to do with the harvest. Thanks Mark!

A little oil in butter prevents the milk solids burning by increasing the overall smoke point. Have at it!

Hi does the coloured corn pop different colours?
That is a good one! Would it be possible to make popcorn out of it and would you have different colours? I am afraid that the colour is only in the skin of the kernels, but you never know?

Popping corn pops up generally white inside or some shade of white. But the kernel colors are often still visible depending on how it pops up.
