Love the recipe it takes me back to School dinners. Wee tip regarding the sugar. Buy normal granulated sugar at half the price of Caster Sugar and blitz it in a food processor for a few seconds and voila, caster sugar. Infact, keep blitzing it and you'll get icing sugar!

Also, here’s a tip if you mix your icing in standing mixer, put a kitchen towel over it after each addition of confectioner sugar. Keeps it from flying all over your kitchen.

I make this all the time, called old school cake. We didn’t have jam in ours at school but did have custard on it.
Reminds me of a Victoria Sponge. Looks delicious. Going on my list of things to bake. Love your recipes and have made quite a few.

You can put granulated sugar in the blender for a short time and Change the texture to caster sugar
