Hawaiian Cowboy Candy

  • INGREDIENTS
    1 lb fresh jalapenos
    2/3 cup cider vinegar
    1 cup chunk fresh or canned pineapple, without juice
    2 cups sugar
    2 tablespoons mustard seed
    INSTRUCTIONS
    Mix cider vinegar, sugar, and mustard seed to low boil. Reduce heat and simmer for 5 minutes.
    Slice jalapenos while syrup mixture is simmering
    Add jalapenos at the simmer for 5 minutes more after they come back up to a boil.
    Put 4 to 5 chunks of pineapple in each jar.
    Using a slotted spoon add jalapenos first and add then liquid filling the jars leaving a 1/4 headspace.
    Wipe rims with wet paper towel.
    Add lids/rings and place in water bath canner. Make sure the jars are completely covered.
    Process at a full boil for 15 minutes.
    Makes 1 1/2 to 2 pints. (I weighed my jalapenos before I cut the stems off, next time will weigh afterwards)

    Wonder if we can just cook the pineapples in the syrup, or just add pineapple juice 🤔
