I eat jackfruit 'flesh' whenever I am in Thailand and Cambodia. Right now I am eating cooked jackfruit seeds, only because I saw them on sale for half-price (end of the day at the supermarket). I am taking them for the vegetarian protein and other nutrients. They are not as tasty as chestnuts. But they taste OK. In Canada I have purchased processed jackfruit seeds (very expensive). I prefer the whole food in its natural state anyway. It is kind of fun peeling the skin off. As with the challenge of tamarind, it prevents one from overeating. BTW, I cooked a curry & chillies soup yesterday adding quite a bit of fresh tamarind added - what a tasty and satisfying soup!

You can also make aggala with it. Toast whole dry seeds on a pan until they could be eaten with its natural sweet taste, remove the outermost skin, smashed with coconut, sugar, black pepper (little bit) especially in a mortar/pestle and make little balls by hand. You can use it for days by refrigerating. What about making bites out of seeds, very tasty. In Sri Lanka we also make a special curries only with seeds, and you could also add seeds to other curries like banana flowers , cucumber , etc. there are lots of recipes that I can say in Sinhala as there’s no English words for them. Actually I enjoyed your videos as a totally vegetarian and thanks a lot for sharing them. Looking forward to more videos on vegetarian/vegan recipes

We in Goa, used to dry jackfruit seeds and coat it with red soil from hills and preserve it for monsoon to be used in different delicacies apart from roasting and boiling to have as snacks... Love your recipe, will try!

I like the Dosa receipe, how can we preserve the seeds ? It spoils within few days!?
Have to nicely sun dry it. No moisture should be there.
