The three cockpits make a lot more sense when you look at the S Gundam, as the original configuration of that is a combiner with a piloted chest- and leg flier and a core fighter in the middle, like the ZZ Gundam. Originally the S-Gundam was supposed to have a crew of three, but after installing ALICE, an AI system, into the first unit there was no real need for more than one pilot (and barely even that, since Ryou Roots was apparently kind of useless and ALICE did most of the flying...). The cockpits had already been built though, so they were left in place, even after the unit was upgraded to the Ex-S spec and basically lost the ability to split into different sub-units. If I recall correctly, the S Gundam was originally not fitted with the Beam Smartgun, it only had the guns on the hips and the backpack, so there's basically three valid configurations you can build with this kit. I believe the S Gundam also flew very briefly with just the upgraded backpack boosters and no additional armor but I'm not entirely sure, that would make a fourth configuration. (There's also the boosted configuration, which has the Ex-S backpack boosters, and then another set of identical boosters in place of the legs. That might require the Deep Striker to build though.)
There is a separate kit for the MG S Gundam Booster Unit, But it’s a somewhat obscure P-Bandai kit. They’re the same parts the Deep Striker uses, though:
You gave me a mental image of a variation that has the cockpits but instead there is nothing, no monitors nor seat nor any controls, just an empty section
From what I've read about the EX-S gundam (I've yet to read gundam sentinel, plan to soon. I just checked the wiki.) it seems like this thing was way way ahead of its time and would outperform all gundam units after it till the unicorn. To state a few of the things the suit has The S and the EX-S have the ALICE artificial intelligence which is pretty much fully sentient. The pilot of the MS, Ryou Roots is completely incompetent so the AI does 90% of the work in combat. The EX-S essentially has one of the most advanced AI's in the UC's history. The EX-S' primary weapon is the beam smart gun which is the second strongest weapon ever put on an MS. Its power output is 56 fucking megawatts. For comparison the ZZ's dual mega beam cannons have a total output of 21.6 megawatts. It also has rapid fire and can bend it's beams while firing to hit its target. This thing seems grossly overpowered. Then there's the incoms. The 2 reflector incoms bend and deflect enemy beams while also bending the smart guns beams for greater accuracy. The head incom is a nice secondary beam gun to have. Even aside from all this, the EX-S still has a bunch of other stuff. So with all this in mind, how does it compare?

@ Mecha : The 4 white "cylinders" around the back are beam guns (S Gundam has only 2, since this takes place at the same-ish time as ZZ, they both have beam guns up there. ZZ's are both guns/sabers though). The huge things that flap around the shoulders are actually propellant tanks. The ship mode was made to go really far/fast, hence requiring lotsa fuel
Prior to seeing this, I had always figured that those cannons were its beam sabers. The design of the thing was already ridiculous enough that I could see it going whole hog and having ZZ’s hyper beam sabers.

"I haven't read the manga so I don't know why, but that's a lot of pilots" Allow me to explain why there are 3 pilots. Each pilot controls a section of the S-Gundam when it transforms into it's separate components. 1 controls the G-Attacker (upper body and arms), another controls the G-Bomber (lower body and legs), and the last one controls the G-Core (core fighter). So normally this Gundam requires a 3 man team to control, before the EX-S upgrade came around. However in the story, it's the main character with the aid of an A.I. unit called Alice that controls it instead.

When you said really soon I didn't expect that it will be right in the middle of the day ( in our country ). But the Ex-S gundam still looks one heck of a master grade for 2019.
