I have made beef wellington a number of times. I experimented one Christmas and used Rib-eye steak in place of loin. OMG it was so great. I really enjoyed watching how it is made in your video. Christmas is mainly when we have this and I enjoy cooking. Now after watching your video I'm thinking of doing this for Thanksgiving & again at Christmas. Thanks of posting this recipe. Shalom

Any tips on how to get the right amount of dux around it so you dont have extra that overlaps? I've watched alot of these B.W. vids, and no one really mentions that. How do you get that looking so perfect? Just rolling it seems like it would lead to a swiss roll situation.

I have to try this on my neighbors soon. It looks too good pass. Roasted Asparagus, and boiled small basil red potatoes. Some of my neighbors are real good with landscaping. I’ve taken up culinary goodness. Something to share…wish me luck.
My wife doesn’t like mushrooms, so I make it with an onion jam of sorts. I put a sweet onion in the food processor like they do with the mushrooms and then cook them until they are nicely carmelized. I also swap out the mustard for a cheese sauce and prosciutto for bacon. But otherwise I do the same process.

Friendly advice…. I can’t afford a whole filet tenderloin so I just used some filet steaks and make individual wellingtons the exact same way
