Honestly freshwater drum taste better if it is from clean water. I have to season Red drum somewhat heavy. (Black drum is awesome!) Anything 1st or 2nd day caught is the key.

What do you get per pound of drum?
Fish house usually around $1.50 - $2.50 / lb. I sell them for around $5/lb retail for ocean caught and under my own licensing.
