In our home, my mom always floured the liver and then pan-fried it in bacon drippings. I think the smokiness of the bacon actually took away a lot of the gaminess of the liver. However, she only fried it about 2-3 minutes per side. She served it with the fried bacon and onions on top, with mashed potatoes, gravy, and buttered corn. Mmmmmm! Thanks for sharing! Growing up my dad and I often didn't have a place of our own but for a couple of years for dinner we went once a week or every two weeks to K-Mart and ate their blue light dinner special when it was liver and onions! I acquired a taste for it and to this day Love it! I also love my Pressure Cooker XL and LOVE YOUR PRESSURE COOKER VIDEOS! Now I can't wait to get to the grocery store and get me some, liver, onions and add some bacon! I'll make it for my husband and together in memory of my dad and in honor of you causing an endearing memory to surface we'll propose a toast! Ha! I haven't had liver and onions for 45 years but I bought a pack of calf liver yesterday because I am severely anemic and underweight. I have been given the okay to eat ANY AND ALL THINGS ORGAN! I hated all of it then but I am so anemic and malnutritioned that any I have tried I found myself drooling over it while it was still raw, lol! I just opened my liver and I am drooling again and am so glad that you have a video on how to cook it. Thanks Rick! I'm soaking now just a couple hours and I am having for breakfast!!!!

I Love liver & onions! I grew up on this. Mom had a great recipe with her cast iron skillet! I do rinse the liver first though. Season and Flour those puppies, then brown them... gravy always optional!
I have liver and onions cooking as I'm typing this. One kitchen tip my mom gave me years ago when dredging meat is to take a couple plastic grocery sacks and put your flour mixture and meat inside, twist it to keep everything inside and shake it away! Perfectly coated every time and no mess!
Rick, you crack me up! Lolol! Liver and onions is always better fried. Then make the gravy around it and let it simmer in the gravy. Serve with creamy mashed potatoes and the gravy is scrumptious. I used to fix it in the 70's. Told the kids it was a fancy steak! Lolol! My oldest daughter and I loved it.
@@akbarshoed you only just fry the flour coated liver to brown and form a crust. Then you simmer it to complete the cooking and tenderize. That flour while it's simmering thickens the gravy. That's how I grew up seeing it done and how I still make it.

Great grandmas make lasting memories..my grandkids tell me when they think of me they think of yummy food an awesome cooking smells in the house as there as always something cooking or baking when they walk in the door.was nice to hear them say that.i like that you chance so many things in the pressure cookers.
Omg, I would remember running into the house smelling something so yummy only to find out it was liver and onions 😕. My yiayia ( grandma) would tell me that it would make me strong. At that age I would rather be weak lol. Great video, it brought back great memories. Ur making it exactly how she did, without the pressure cooker.
I watched your video there are a few things I did after watching yours but I think you might want to try to make this dish may make it a little better maybe I brown my onions in the pressure cooker with some bacon fat I also salt and peppered and flour my liver I browned it for just a few minutes in a separate pan I added-browned liver to Pressure Cooker, cooked for about 8 minutes, I started with frozen liver letting it thaw only until I was able to separate it with my fingers. Came out delicious.😊
I love baby beef liver fried in a cast iron skillet. Smothered in onions and fried bacon, never soaked overnight or with beef stock and flour-based gravy. Just a rich, natural pan gravy. Onions are sauteed in the bacon grease used.
Nice video :) My mom cooks liver from beef, lamb, chicken and turkey livers. She also adds carrots and a couple of full teaspoons of sower cream towards the end of frying.
My hubby is low on iron, and Dr told me to fix him liver at least 2 times a week...I try to do that...but I normally buy the calf liver. Fries real fast in iron skillet. Very good Good video, Rick. Ty
I made liver and onions yesterday. Floured the liver and fried in beef tallow. Removed from skillet and fried the onions. Put 2 packs of Lipton beefy onion with water. A couple tablespoons of worshestershire, salt and pepper and returned the liver back to the skillet and simmered for 2 hours while gently stirring every so often. Delicious. But I never thought about pressure cooking it. I’ll have to try it next time. Although 3 minutes seems really fast. I’m not sure about the amount of time.?
Hey again Rick, Well, this is what I did. I cut up an onion, tossed a gob (about 3 table spoons) of butter in the pot, and started to sauté' the onions and some carrots that I tossed in with them. When the onions seemed done enough, I put the liver which I had coated with seasoned flour and seared for 30-60 seconds per side in a frying pan, in on top of the onions and carrots. I then poured 1 cup of Beef Broth on top of the liver, covered it with Baby Bella Mushrooms, put the lid on and selected "Meat/Stews" button, set it for 3 minutes and will let you know later how it came out...eager to taste it now.
OK, here's an update. I guess you noticed my big goof! I totally forgot to add Salt and Pepper to the liver! Would have made it better overall methinks. Anyway, it did taste good, the texture was just like I like it, and it gets better with time. I even tried a tiny bit of Tobasco sauce on a piece of liver, and it was fine...good both with and without the Tobasco. The Baby Bella Mushrooms were magnificent and will always be in my future Liver and Onions dishes. I think I should have added some of the tiny potatoes I had but I totally forgot it. I had my doubts about the 3-minute cooking time, but you were right...just perfect in timing. The seasoning I put in the flower is "The Spice Lab Gourmet Spices" Salt Free Citrus & Dill Salmon Seafood Seasoning! Excellent flavor for the liver too!
I make beef liver in a creole sauce (bacon, peppers, onions, tomato sauce) -- delish -- but have never made it in a pressure cooker. I think I'll try it that way this week to see how it turns out. Normally, I do up the liver and then let it simmer while I make the rice and green beans I have with it, but I think I'll have to do the rice and green beans first in the Instant Pot, and while that's cooking, do the liver in my stove top pressure cooker.
Since I was a kid my mom made liver an onions once a week and was told to eat whats put in front of you. I did not like it then and now if it is put in front of me I will eat it with buckets of ketchup and still dont like it. You are a better man than I. Kudos to you for trying it again after all those years. My wife loves it so I will persevere and try your recipe again. Cheers.

We always keep the liver and heart from the deer my husband kills every season. I cook it for him but I don't eat it. Cool you still have those dishes. You should have taken the onions out of the pot , saute the liver, deglaze introduce the onions back into it and then put the liver in then add your base liquid.
Hi Rick, my mum always added a bit of white vinegar when frying liver, try it, it’s tastes great when fried in olive oil and butter after frying off the onions and garlic , thanks you for your uploads!

Aaahhh! Three minutes, that's what I was wondering. I tried making a liver dish for the first time and was definitely thinking more than once that I overcooked using the 15 minute setting. Wondering what the time would be using frozen livers? Guessing six minutes or maybe less? Thinking I'll try six minutes next and go down from there. I've never released pressure on the frozen meat however... hhhmmm...
Rick when I was a little girl my Gram loved liver & onions. She also loved boiled okra, okra and tomatoes, fried okra. To this day I love all of these. My Mama passed away at age 64. She would cook liver and onions and invite me over for lunch. My husband and children weren't fond of it. I think I could have talked my youngest into eating it because he wasn't picky as his Daddy and brother. Thanks for the memories. Rick, you may not be able to answer this question, is the Instant Pot your favorite pressure cooker? If you can answer this question which one of your pressure cookers is your favorite? Those are great memories! I can still smell it frying in my Grammys kitchen so many years ago. The Instant Pot is real good and never had any problems with it. I have so many I couldn't say which is my favorite. Except that the Elite is my least favorite. :)
Love that you like using your mums plates, saw this video and I’m making it tonight, yum yum. What type of liver do you use? I grew up in England and we always had Ox liver, which is from a cow not an oz! But here in Australia they all seem to use lambs liver or lambs fry they call it. But we’ve found the lambs liver isn’t as strong a flavour as ox. If I’m lucky my local butcher will get an ox liver for me, but I have to buy the whole thing which is huge....
Liver is a super food, leatherface knew what he was doing. It’s got tons of k2 which is great for your arteries and breaking down cholesterol clots from sugar. It also has hormones that help with all sorts of things. It also contains bio available B vitamins, which are very hard to come by. Natto is a super food, with more fiber. With similar benefits, but a lot less nutrients I imagine. Of course these meats are cooked so that may be reduced. It’s also 75% protein. 20gp per serving.
We call that lambs fry. We also make it with bacon and onions. I am not a big fan but will eat it once every 7 years or so lol. And yes it is very cheap here in Australia too.
Have you tried Liver & Onions Spanish style (sort of)? I used to torture my kids with this style back in the 70s. I don't remember the recipe but it had tomatoes, garlic, onions and other veggies, etc. along with the breaded liver in it. I salted and peppered the flour as well. They actually liked it.
Enjoyed your video and recipe. My Grandmother got me to like fried chicken liver with onions when i was very young. Don't know if your Grandmother used Chicken livers that are smaller and usually dredged in flour and fried in a pan with the caramelized onions. I think you used Beef liver as they were big pieces unless you have giant chickes by you lol. My neighbor before he passed had mentioned he makes chicken live and onions and asked as a joke if I wanted any.. I was waiting at his garage door with plate in-hand.. some people don't realize that liver worst is basically liver pate like Bloodworst or other liver pates usually made with goose liver or other animal livers or marinated meat or fish. it's a delicacy in a lot of places around the world and a lot of the old world taste especially in royalty.. they enjoyed their goose liver know as foie gras.
I have never eaten this but I will cook it for the old man he been trying to get myself & and my son to eat/or try different things all I can say at least you have a dog to feed it too if you don't like it although my sister has 3 dogs she made homemade food from thanksgiving went though process of cooking it and her dogs refused to eat it.

How do you cook liver in boiled water or pressure cooker, without any additives or marinates so it is tender? Also, how do you cook chicken breast using these methods so it is soft as well? I tend to have rubbery pieces.

You should dry all that liquid and before pressure cooking and sear the meet so it releases all liquid. Try some tomato paste too it reduces the irony taste. Just my two cents.
I hate that I ate what ever my mom made all the other kids had a food they hated i didn't lol , I ate it from an early age tripe , liver and onions it tasted good to me !!, vegetables and my Italian dad might of got mad if I didn't eat everything but hey I ate porterhouse steaks lots of them ! with mushrooms, my mom made and lots of pasta tons of it and ricotta cheese and i didnt get tired of it, meatballs , lasagna , italian bread its all good.
Hey Rick! What do you think? If you sliced up some baking potatoes and carrots and put them in there "raw" when you put the liver in, do you think they would cook enough with it? Might be tasty to have taters and carrots with the liver and onions methinks.
I just love you guys! OMG thanks so much for the video! During this coranavirus quarantine I have been cooking things I would never cook. Liver is on my list. Only because I am so deficient and my Dr says I can eat organ meat all the time. Well I love chicken livers but I have memories of beef liver and onions from growing up that are awful! We could smell it walking home from school a block away!! But I want to try it if I can get it tender!

I dunno. I soak my beef liver in buttermilk then cook up some chopped bacon and onions. Set the bacon n onions off to the side and fry the flour dredged liver in the bacon fat. Mmm! I do admire that you have gravy. Liver runs me about a dollar for three thick slices at the meat packing plant. Good Lord though, 5 pressure cookers! Now I have a taste for this.

Looks yummy. Can't eat organ meats I have gout. Didn't eat it as kid other than they would chop the liver up into tiny pieces and use to make dirty rice, school lunch mmm. In college, I just ate the onions.

Looks little raw I would go longer .... Don't like liver but will cook for my family they love it ... I used to love it as a kid , now can't stand the smell , the feeling of the meat nothing ick .... But I do get it now from a spanish store duno why it is but theirs taste so much better I also put lots of vinigar in it seems to mellow the gamey taste I usually use apple cider vinegar but have used white when outta the other but apple cider seems to be best

You should have taken the onions out of the pot , saute the liver, deglaze introduce the onions back into it and then put the liver in then add your base liquid.
My wee Mammy God bless & rest her used to make her liver that way also Minus the pressure cooker of course :P
Hi Rick, my mum always added a bit of white vinegar when frying liver, try it, it’s tastes great when fried in olive oil and butter after frying off the onions and garlic , thanks you for your uploads!

Aaahhh! Three minutes, that's what I was wondering. I tried making a liver dish for the first time and was definitely thinking more than once that I overcooked using the 15 minute setting. Wondering what the time would be using frozen livers? Guessing six minutes or maybe less? Thinking I'll try six minutes next and go down from there. I've never released pressure on the frozen meat however... hhhmmm...

Rick when I was a little girl my Gram loved liver & onions. She also loved boiled okra, okra and tomatoes, fried okra. To this day I love all of these. My Mama passed away at age 64. She would cook liver and onions and invite me over for lunch. My husband and children weren't fond of it. I think I could have talked my youngest into eating it because he wasn't picky as his Daddy and brother. Thanks for the memories. Rick, you may not be able to answer this question, is the Instant Pot your favorite pressure cooker? If you can answer this question which one of your pressure cookers is your favorite? Thanks for the great vlog. BTW, I never learned how to cook my liver like Gram or Mama plus many other things.
Those are great memories! I can still smell it frying in my Grammys kitchen so many years ago. The Instant Pot is real good and never had any problems with it. I have so many I couldn't say which is my favorite. Except that the Elite is my least favorite. :)

I grew up in England and we always had Ox liver, which is from a cow not an oz! But here in Australia they all seem to use lambs liver or lambs fry they call it. But we’ve found the lambs liver isn’t as strong a flavour as ox. If I’m lucky my local butcher will get an ox liver for me, but I have to buy the whole thing which is huge....

It’s got tons of k2 which is great for your arteries and breaking down cholesterol clots from sugar.
It also has hormones that help with all sorts of things. It also contains bio available B vitamins, which are very hard to come by.
Natto is a super food, with more fiber. With similar benefits, but a lot less nutrients I imagine. Of course these meats are cooked so that may be reduced. It’s also 75% protein. 20gp per serving.

We call that lambs fry. We also make it with bacon and onions. I am not a big fan but will eat it once every 7 years or so lol. And yes it is very cheap here in Australia too.

Have you tried Liver & Onions Spanish style (sort of)? I used to torture my kids with this style back in the 70s. I don't remember the recipe but it had tomatoes, garlic, onions and other veggies, etc. along with the breaded liver in it. I salted and peppered the flour as well. They actually liked it.

Enjoyed your video and recipe. My Grandmother got me to like fried chicken liver with onions when i was very young. Don't know if your Grandmother used Chicken livers that are smaller and usually dredged in flour and fried in a pan with the caramelized onions. I think you used Beef liver as they were big pieces unless you have giant chickes by you lol. My neighbor before he passed had mentioned he makes chicken live and onions and asked as a joke if I wanted any.. I was waiting at his garage door with plate in-hand.. some people don't realize that liver worst is basically liver pate like Bloodworst or other liver pates usually made with goose liver or other animal livers or marinated meat or fish. it's a delicacy in a lot of places around the world and a lot of the old world taste especially in royalty.. they enjoyed their goose liver know as foie gras.

Even though the liver was falling apart, eating raw anything is somewhat of a turn off. Have you a maximum cook time that would solve the raw issue?

I have never eaten this but I will cook it for the old man he been trying to get myself & and my son to eat/or try different things all I can say at least you have a dog to feed it too if you don't like it although my sister has 3 dogs she made homemade food from thanksgiving went though process of cooking it and her dogs refused to eat it.

How do you cook liver in boiled water or pressure cooker, without any additives or marinates so it is tender? Also, how do you cook chicken breast using these methods so it is soft as well? I tend to have rubbery pieces.
Usually all meats that i cook in the pressure cooker are very tender. If you leave it in too long it could get tough.

You should dry all that liquid and before pressure cooking and sear the meet so it releases all liquid. Try some tomato paste too it reduces the irony taste. Just my two cents.
I think I'd have browned it good with the flour on first in a fry pan then transfered with the onions to the pot

I hate that I ate what ever my mom made all the other kids had a food they hated i didn't lol , I ate it from an early age tripe , liver and onions it tasted good to me !!, vegetables and my Italian dad might of got mad if I didn't eat
everything but hey I ate porterhouse steaks lots of them ! with mushrooms, my mom made and lots of pasta tons of it and ricotta cheese and i didnt get tired of it, meatballs , lasagna , italian bread its all good.

I just love you guys! OMG thanks so much for the video! During this coranavirus quarantine I have been cooking things I would never cook. Liver is on my list. Only because I am so deficient and my Dr says I can eat organ meat all the time. Well I love chicken livers but I have memories of beef liver and onions from growing up that are awful! We could smell it walking home from school a block away!! But I want to try it if I can get it tender!

I dunno. I soak my beef liver in buttermilk then cook up some chopped bacon and onions. Set the bacon n onions off to the side and fry the flour dredged liver in the bacon fat. Mmm! I do admire that you have gravy. Liver runs me about a dollar for three thick slices at the meat packing plant. Good Lord though, 5 pressure cookers! Now I have a taste for this.

Looks yummy. Can't eat organ meats I have gout. Didn't eat it as kid other than they would chop the liver up into tiny pieces and use to make dirty rice, school lunch mmm. In college, I just ate the onions.

Looks little raw I would go longer .... Don't like liver but will cook for my family they love it ... I used to love it as a kid , now can't stand the smell , the feeling of the meat nothing ick .... But I do get it now from a spanish store duno why it is but theirs taste so much better I also put lots of vinigar in it seems to mellow the gamey taste I usually use apple cider vinegar but have used white when outta the other but apple cider seems to be best
