Hey! Nobu chef here. The steak you had was most likely A5 Iwachiko Wagyu (This is the wagyu we use here in the Nobu branches in Australia). I'm a bit bummed out that you didn't try the steak with the Anticucho sauce :( . Brother man, he just had a 5oz a5 Wagyu steak delivered to his home. Those cows are raised in japan in 5 star hotels then sent to the US on a private plane then cooked by a michelin chef and then delivered to your front door by a delivery driver. Yes that'll be $200. Its not for broke people

You can buy A5 wagyu raw online and cook it yourself for much cheaper. When I (very occasionally) have it, I find a portion of 150-200g (5-7oz) is ample for me because it's so rich you don't necessarily want too much of it. So for about 50$, it's definitely worth spoiling myself sometimes.
Honestly Ben, next time try between 120 to 130 F internal temperature. Also, next time, just go to your Japanese butcher shop and buy a ribeye or the cut you had here, New-York/Kansas strip of A5 Wagyu, about 5/8 inch thick, and sear it 30-45 seconds on each side on a very hot cast iron plate (about 1000F).
