Tip - put a rack (can use chopsticks or two knives, for example) on the plate , for the toasties to sit on. Keeps it crispy as its not sat directly on the plate and getting soggy

Using mayo to cook your bread is really good for that caramel color. It has very high smoking point so you could use higher temperature if you want to. - Butter gets burned very fast so I wouldn’t go above 3/6 on my stove. Mixing some olive oil with the butter can increase the limit of when it starts burning.
Cooking it slow is the secret. Put the burner on the lowest heat possible and just wait until the bread browns. The heat will dry out the bread before it toasts, which makes it crispy.
One more thing is dont put your sandwich directly on a plate when you’re done grilling. The steam coming off the hot sandwich will make your bread soggy and lose its crisp. Instead you should put your finished sandwich on a wire rack, or the easier option is set two forks face down on your plate and rest your sandwich on top of the forks (essentially just lifts your sandwich off the plate and allows the steam to escape)
This is the same reason why french fries aren't crispy if you order them to go. You gotta keep the bag open, and not stack anything on top of the fries. Fast food places typically will throw napkins on top and fold the paper bag closed. That's no bueno for crispy fries.

We just made this for dinner tonight. Pro tips: Do NOT underestimate how fast the buttered griddle will burn your bread even on medium/medium-low heat. Keep an EYE under em! Use little *campari* tomatoes! Halve em for more surface area to brown. Don’t use too much oil for them either. The sugar will caramelize w the apple cider vinegar, reduces faster than you think. I added bacon & that TOMATO JAM put this thing WAYYY over the top!! Best grilled cheese sando ever _because_ of that jam! Add MSG while sautéing em. 🤌👌
Use garlic salt instead of regular salt. A little bit of cream cheese can make it creamier if that's your style, and I pretty much always add a touch of spice with hot sauce or something similar. All the dairy stops it from being spicy, you just get more flavor.
Don't forget chicken stock. But yea this is pretty much it. Restaurants season tf outta their food. It's always baffling how many at home recipes I see that are written to serve a family of 3 or 4 and it calls for like 1 tsp of salt or something.
Skip the salt on the cheese, and use extra-crispy bacon (or fried SPAM, no ham) with a little black pepper instead. Add basil to the tomatoes, or skip and make tomato-basil soup for dipping, and enjoy. Your tastebuds will thank you!

Most amazing grilled cheese we used to make at work -
Sourdough bread - toasted
Mayo
One side gets tomato and bacon
One side gets pickles
Each side gets one slice of cheddar and 1 slice Swiss
Throw in melt (or an oven at home) until cheese is melted
Put two side together and bam ! Amazing grilled cheese worth 16.99

1. Which cheese comes closest to giving you all the flavors in one cheese? The sweetness of mascarpone, the cheesiness of cheddar, the creaminess of mozzarella, the pungency of Limburger, and the saltiness of Parmesan?
2. “just char a bunch of tomatoes”. I felt like I heard something that sounded less appetizing.
I've never had a grilled cheese that was better in a restaurant and would never order one knowing that I can make a better one at home. Obviously most meals would be more affordable to cook at home but I'm confident I xan cook a grilled cheese. Other stuff not so much

Honestly I’ve yet to find a grilled cheese I enjoy more than the simplest:
Wonder bread
Basic American cheese product (take your pick, craft, velveeta, they all taste the same)
2tbsp of salted butter melted in the pan until it foams
High heat, cover the pan to steam the cheese, flip to crisp the other side, cut diagonally
I know it’s basic but if I want something more substantial I’m not eating a grilled cheese lol

Best cheese for those is gruyere. Not as available as something like cheddar or Gouda but much better-tasting.
The moment anything but cheese enters a grilled cheese, it is NO LONGER a grilled cheese.....it is a melt
Also if you really want a good one. Make your own processed cheese. You can make any combo of cheese melt and flow like kraft singles with a bit of prep and some emulsifiers. Basically the same thing they do to make American cheese

For my grilled cheese I always do like 1 slice of thick cheddar or pepper jack or something snd one slice of American cut in half on both sides of the other cheese. Makes a perfect gooey combo
