You can also just alternate the outer strings. Start with the left outer string, then right outer string. Left, right, left, right. Good to know that way too though! I am trying to make a ring with hemp but don't quite understand how to do it. Is it basically the same process?
Also known as a solomon bar and cobra stitch. Can be used with Paracord also (550 cord). Try doing another stitch over it going in the oposite direction, aka, once you get to the end, do it in reverse. Makes a really cool stitch. Also, if you don't alternate direction when doing the knots, you make a neat spiral design.

how long should the threads be? looking for a minimum length, or even an average, just something to work with so I don't waste a ton of material troubleshooting.

There are hundreds of reasons to use hemp over cotton. The only way that cotton is better is that it's softer. But with our modern textile mills, they're getting pretty close to cotton feeling hemp. Industrial hemp is such a versatile renewable resource, that by using hemp, you're helping the global environment.
Keep your bead carrier tight while making the knots. That will help a little. Also make sure the knots bump up next to each other. And basically just practice until you get the right feel and what looks good to you.

Industrial hemp is more mildew and rot resistant, higher tensile strength, more durable (a shirt made from a hemp blend will last more than 5 times longer than cotton), doesn't need pesticides for a good crop yield, every part of the plant can be used for something, etc. Remember all those sailing vessels that used to roam the seas powered by sales? The ropes were made from hemp.
You might be only tying a left half knot or right half knot. Be sure to alternate...or just make spirals, they're cool too. Also make sure to make sure each knot is tight and not showing gaps.
@selbiANDjenny just depends i use 3 strings you can use 4 and 2 also when you use 2 you just fold in half and make a loop. you take some hemp and measure the body part your making the jewelry from then double the amount and cut then you take that string and cut out a around 3 times that amount 2 times. and then tie a not and start
This is 12 strand Romanian hemp. If you can find it from Ecolution, it's the best that's out there. You can also pick it up at most hobby stores or in the hobby section in places like Wal-mart. The hemp in most craft sections is Hungarian and will be sort of coarse and lumpy...again, try to find Ecolution hemp.

i never know how tight, or loose to make the square knot when i'm doing it. like if i do it too tight it looks funny, and when i leave it too loose it just looks sloppy. any suggestions?
